Air Fryer Crispy Baby Potatoes
Why this recipe works
- Crisp edges, fluffy centres: Air-frying at high heat gives the potatoes a roasted-style crust while keeping the insides tender.
- Low-effort cooking: The potatoes need only a short prep before the air fryer does most of the work.
- Bright finish: Lemon juice cuts through the olive oil and garlic, making the potatoes taste fresher and more balanced.

Texture tips
- For extra crispness: Pat the potatoes dry before coating them so the oil can cling properly and the surface browns instead of steaming.
- Keep space in the basket: Arrange the potatoes in a single layer where possible; if the basket is packed, cook in batches for better colour.
Ingredient notes
- Choose similar-sized potatoes: Mixed baby potatoes work well, but cutting larger ones to match the smaller potatoes helps everything cook evenly.
- Use fresh herbs if possible: Fresh rosemary gives a cleaner, more aromatic flavour than dried herbs in this quick air-fryer method.
Common mistakes
- Overfilling the basket: Too many potatoes trap steam and soften the edges, so use two batches if needed.
- Skipping the shake: Shaking the basket halfway through exposes more surfaces to the hot air, helping the potatoes brown more evenly.
Make-ahead tips
- Re-crisp leftovers: Cool completely, refrigerate, then reheat in the air fryer at 190°C (375°F) until piping hot and crisp again.
- Best served hot: The potatoes are at their crispiest straight from the air fryer, so finish with lemon and seasoning just before serving.

Instructions
- If any potatoes are larger, halve them so they are roughly the same size. Pat the potatoes dry. Finely grate the garlic and strip the rosemary leaves from the sprigs.
- In a mixing bowl, toss the potatoes with the olive oil, garlic and rosemary until well coated. Preheat the air fryer to 200°C (390°F) for 3 minutes. Tip the potatoes into the basket in a single layer where possible.
- Air-fry for 20 minutes, shaking the basket halfway through, until the potatoes are deeply golden and a knife slides in easily. If they need more colour, cook for a further 3 to 5 minutes. Transfer to a serving dish.
- Squeeze over a little lemon juice, then season with the fine sea salt and black pepper to taste. Toss briefly and serve hot with extra lemon wedges alongside if you like.

Tips
- For extra crisp edges, leave the coated potatoes to sit for 5 minutes while the air fryer preheats, then cook as directed.
- Do not crowd the basket; cook in two batches if needed so the potatoes roast rather than steam.
Substitutions
- Replace Fresh rosemary with fresh thyme for a softer, more floral herb note.
- Replace Lemon with lime for a sharper, more tropical citrus finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in an airtight container. Reheat in the air fryer at 190°C (375°F) for 4 to 6 minutes, shaking once, until piping hot and re-crisped.
