Stoemp met Worst (Mashed Potatoes and Vegetables with Sausage)
Why this recipe works
- Hearty and familiar: Potatoes, carrots, leeks and sausage create a warming, filling plate with broad everyday appeal.
- Rustic texture: The mash stays deliberately coarse and cohesive, contrasting well with browned pan-fried sausages.
- Simple flavour, good depth: Buttery leeks add sweetness, while nutmeg, black pepper and Dijon mustard bring warmth and sharpness.

Authenticity notes
- Belgian home-style cooking: Stoemp is typically a rustic mash rather than a perfectly smooth purée, with vegetables folded through for texture and flavour.
- Classic with sausage: Serving it with pan-fried sausage and mustard is a familiar, practical pairing that suits the rich mash.
Texture tips
- Steam-dry before mashing: Returning the drained potatoes and carrots to the hot pot helps excess moisture evaporate, keeping the stoemp fluffy rather than loose.
- Keep it rustic: Mash until the vegetables hold together but still have some texture; overworking can make the mixture heavy.
Ingredient notes
- Wash the leeks well: Sliced leeks can hold grit between the layers, so rinse them thoroughly before softening in butter.
- Use nutmeg with restraint: Nutmeg should add warmth in the background, not dominate the mash; adjust gradually to taste.
Make-ahead tips
- Store mash and sausage separately: Keeping the stoemp and sausages in separate containers helps preserve the texture when reheating.
- Reheat gently: Warm the stoemp over a low heat with a little milk to loosen it, and reheat the sausages separately until piping hot throughout.

Instructions
- Peel the potatoes and carrots, then cut them into even chunks. Put them in a large pot, cover with cold water and add 1 tsp of the salt. Bring to the boil, then simmer for 15 to 18 minutes until very tender.
- Meanwhile, trim the leek, slice it, and rinse well to remove any grit. Melt 30 g of the butter in a frying pan over a medium heat, then cook the leek for 8 to 10 minutes until soft and sweet, without browning. Take off the heat.
- Drain the potatoes and carrots well, then return them to the hot pot for 1 minute to steam-dry. Add the milk, remaining 30 g butter, nutmeg, black pepper and the remaining 1 tsp salt, then mash until rustic but cohesive. Fold in the buttery leeks and keep warm on a low heat.
- Wipe out the frying pan and set it over a medium heat. Pan-fry the pork sausages for 12 to 15 minutes, turning regularly, until browned and cooked through. If they brown too quickly, lower the heat so they cook evenly.
- Spoon the stoemp onto plates and top with the sausages. Serve the Dijon mustard on the side for dipping. Finish with a final grind of black pepper if you like.
Recipe notes
Tips
- For the best texture, let the drained potatoes and carrots steam-dry in the hot pot before mashing so the stoemp stays fluffy rather than watery.
- If serving children or anyone sensitive to spice, start with a pinch of nutmeg and add more to taste.
- Food safety: make sure the pork sausages are cooked through and piping hot in the centre before serving.
Substitutions
- Replace whole milk with lactose-free-milk for a similar richness.
- Replace Dijon mustard with whole-grain mustard for a milder heat and a coarser texture.
Storage
- Refrigerate up to 2 days
- Cool the stoemp and sausages quickly, then refrigerate in separate airtight containers. Reheat the stoemp in a saucepan over a low heat with a splash of whole milk until piping hot, and reheat the sausages in a frying pan over a medium-low heat until hot throughout.
