Vegetarische Stamppot (Dutch Potato Mash with Kale and Leeks)
Why this recipe works
- Creamy, cohesive mash: Floury potatoes break down easily, while warm milk and butter help create a smooth, rich texture without overworking the mash.
- Efficient cooking: The leeks and kale cook in the same pot as the potatoes, keeping the method simple and letting the vegetables blend naturally into the mash.
- Sharp finish: Wholegrain mustard cuts through the richness and gives the finished stamppot a classic savoury lift.

Authenticity notes
- Dutch home-style mash: Stamppot is typically a rustic, comforting mash rather than a perfectly smooth purée, so a little texture from the greens is part of its appeal.
- Mustard on the side: Serving mustard alongside the mash is a familiar Dutch-style finish, adding sharpness to each spoonful.
Ingredient notes
- Use floury potatoes: Floury potatoes such as russets mash more easily and give stamppot its soft, creamy body.
- Clean the leeks well: Leeks can hold grit between their layers, so slice and rinse them thoroughly before adding them to the pot.
- Nutmeg works best restrained: A small amount of ground nutmeg adds warmth without making the mash taste sweet or heavily spiced.
Texture tips
- Steam-dry before mashing: Returning the drained vegetables to the hot pot briefly helps excess moisture evaporate, giving a creamier mash rather than a watery one.
- Add milk gradually: Pouring in the warm milk little by little makes it easier to control the texture and stop the stamppot becoming too loose.
Make-ahead tips
- Reheat gently: Warm leftovers over a low heat with a splash of milk, stirring often until piping hot throughout.
- Freezes in portions: Freeze cooled portions in sealed containers, then defrost overnight in the fridge before reheating.
- Best freshly mashed: The texture is at its creamiest when served straight away, though leftovers still reheat well with a little added milk.

Ingredients
Instructions
- Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water and add 1.5 tsp of the salt. Bring to the boil, then simmer for 10 minutes.
- Meanwhile, trim and rinse the leeks well, then slice them. Strip any tough stems from the kale and roughly chop the leaves. Warm the milk in a small saucepan until steaming but not boiling.
- Add the leeks to the pot and simmer for 5 minutes. Add the kale on top, cover, and cook for 8 to 10 minutes more, until the potatoes are very tender and the kale is soft.
- Drain well in a colander, then return everything to the hot pot. Let it steam-dry for 1 minute over a low heat, shaking the pot gently. Take off the heat.
- Add the butter and mash until mostly smooth. Pour in the warm milk gradually, mashing and stirring until creamy. Season with the remaining 0.5 tsp salt, nutmeg and black pepper, tasting as you go.
- Spoon the stamppot into bowls and serve with a spoon of whole-grain mustard on the side or swirled through. Eat straight away while hot and creamy.
Recipe notes
Tips
- Rinse the leeks thoroughly after slicing to remove any grit, then drain well before adding to the pot.
- Warm the whole milk before mashing so the stamppot stays hot and turns creamy without needing extra cooking.
- If serving vulnerable groups, make sure the mash is piping hot throughout before serving.
Substitutions
- Replace Whole milk with Lactose-free milk for a similar creamy result.
- Replace Unsalted butter with Plant-based butter to make it dairy-free while keeping the same texture.
- Replace Whole-grain mustard with Dijon mustard for a smoother, sharper finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat in a saucepan over a low heat with a splash of whole milk, stirring often, until piping hot; or microwave in short bursts, stirring between. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
