Black Pudding with Mash
Why this recipe works
- Crisp and smooth contrast: The black pudding is fried until crisp at the edges, then served over soft, buttery mash for a satisfying texture balance.
- Richness balanced by mustard: Wholegrain mustard adds sharpness and a little bite, cutting through the richness of the black pudding and buttered potatoes.
- Ready quickly: The potatoes, onions and black pudding cook in parallel, keeping the dish practical for a weeknight meal.

Texture tips
- For smoother mash: Drain the potatoes thoroughly and let them steam-dry briefly before adding butter and warm milk.
- For crisper black pudding: Slice the rounds evenly and fry over medium heat so the edges crisp before the centre becomes dry.
Common mistakes
- Do not rush the onions: Keep the onions over medium-low heat and stir regularly; too much heat will brown the edges before they soften properly.
- Avoid dry mash: Add the warm milk gradually and beat only until smooth, adjusting the texture before serving.
- Heat the black pudding fully: Make sure the black pudding is piping hot all the way through, especially when serving anyone vulnerable.
Ingredient notes
- Choose floury potatoes: Russet potatoes work well because they mash to a light, fluffy texture rather than turning waxy.
- Use mustard to balance richness: Wholegrain mustard gives a sharper finish, while a sweeter mustard will make the plate milder and rounder.
Serving ideas
- Add greens: Serve with peas, cabbage or wilted greens if you want a fresher side alongside the rich mash and black pudding.
- Serve with gravy: A light onion gravy works well if you prefer a wetter, more pub-style plate.

Instructions
- Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water and add 1 tsp of the fine sea salt. Bring to the boil, then simmer for 12 to 15 minutes until very tender.
- Meanwhile, halve and thinly slice the onion. Heat the rapeseed oil with 20 g of the unsalted butter in a frying pan over medium-low heat. Cook the onion for 10 to 12 minutes, stirring often, until soft and caramelised.
- Slice the black pudding into rounds about 1.5 cm thick. Push the onions to one side of the pan and turn the heat up to medium. Fry the black pudding for 2 to 3 minutes per side until crisp at the edges and heated through.
- Warm the whole milk in a small saucepan until steaming but not boiling. Drain the potatoes well, then return them to the hot pot for 30 seconds to dry out. Mash with the remaining unsalted butter, then beat in the warm milk until smooth.
- Season the mash with the remaining fine sea salt and the black pepper. Spoon the mash onto plates and top with the caramelised onions and black pudding. Serve with the whole-grain mustard on the side.

Tips
- For the smoothest mash, drain the potatoes thoroughly and let them steam-dry briefly before mashing.
- Keep the onions on a medium-low heat and stir regularly so they caramelise without burning.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the black pudding is piping hot all the way through before serving.
Substitutions
- Replace Whole milk with Lactose-free milk for a similar richness.
- Replace Rapeseed oil with Olive oil for a slightly fruitier flavour.
- Replace Whole-grain mustard with Bavarian sweet mustard for a milder, sweeter finish.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat the mash with a splash of whole milk in a saucepan over low heat, stirring until piping hot; reheat the black pudding and onions in a frying pan over medium heat until hot throughout.
