Vossakorv (Smoked Pork Sausage with Mash and Braised Red Cabbage)
Why this recipe works
- Balanced textures: The browned sausage casing contrasts with smooth buttery mash and tender braised cabbage.
- Simple layered flavour: Smoked pork, caraway, apple, onion, and black pepper create depth without a long ingredient list.
- Hearty and warming: Creamy potatoes and gently braised cabbage turn the smoked sausage into a complete, satisfying dinner.

Timing notes
- Serve while everything is hot: The dish is best when the mash is freshly made, the cabbage is warm, and the sausage has just been browned.
- Overlap the work: Start the potatoes first, then cook the cabbage and heat the sausage while they boil to keep the total time efficient.
Texture tips
- For smoother mash: Drain the potatoes well, let them steam briefly in the hot pot, and mash while still hot before adding the warm milk.
- Keep the cabbage tender, not dull: Braise gently and stop once the cabbage is soft but still vibrant, adding a splash of water if the pan starts to dry out.
Common mistakes
- Boiling the sausage: Keep the sausage water at a bare simmer; vigorous boiling can split the casing and make the sausage less juicy.
- Browning without drying: Pat the sausages dry before pan-frying so the casing browns instead of steaming in the pan.
Ingredient notes
- Choose a firm apple: A tart-sweet apple holds its shape better during braising and keeps the cabbage from tasting flat.
- Caraway is key: Caraway seeds give the cabbage its recognisably Nordic warmth and work especially well with smoked pork.
Equipment you'll need
Ingredients
Mashed potatoes
Braised red cabbage with apple
Sausage
Instructions
- Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water, add 1 tsp of the fine sea salt, and bring to the boil. Cook for 15 to 20 minutes until very tender when pierced with a knife.
- While the potatoes cook, peel and thinly slice the onion, then shred the red cabbage and core and slice the apples. Melt 30 g of the unsalted butter in a saucepan over medium heat, then cook the onion for 5 minutes until softened. Stir in the cabbage, apples, caraway seeds, 0.5 tsp black pepper, the remaining 1 tsp fine sea salt, and 150 ml water.
- Cover and simmer the cabbage mixture for 20 to 25 minutes, stirring occasionally, until tender but still vibrant. If the pan looks dry, add a splash of water and keep the heat low so it braises rather than fries. Taste and adjust with a little more black pepper if you like.
- Put the smoked pork sausage in a saucepan and add 1 litre water. Bring just to a gentle simmer, then cook for 10 minutes to heat through without splitting the casing. Lift the sausages out and pat dry.
- Melt 15 g of the unsalted butter in a large frying pan over medium heat. Add the sausages and cook for 4 to 6 minutes, turning, until the casing is evenly browned. Finish with 0.25 tsp black pepper over the sausages.
- Drain the potatoes well and return them to the hot pot for 1 minute to steam off excess moisture. Warm the whole milk, then mash the potatoes with the remaining 80 g unsalted butter and the warm milk until smooth and buttery. Serve the sausages with the mash and a generous spoonful of the warm braised red cabbage and apple.
Recipe notes
Tips
- Keep the sausage water at a bare simmer; a rolling boil can split the casing and wash out flavour.
- For extra-smooth mash, mash the potatoes while they are still hot and warm the milk before adding.
- If serving anyone vulnerable, make sure the sausages are piping hot all the way through before browning and serving.
Substitutions
- Replace whole milk with lactose-free milk for a similar richness.
- Replace russet potato with yukon gold potato for a naturally creamier mash.
- Replace apple with pear for a softer, sweeter braised cabbage.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly and refrigerate in airtight containers. Reheat the mash with a splash of whole milk in a saucepan over low heat, stirring until piping hot; reheat the cabbage gently in a saucepan with a tablespoon of water. Reheat sausages in a frying pan over medium-low heat until piping hot, adding a small knob of unsalted butter if the pan is dry.
