Kaiserschmarrn (Torn Pancake) with Apple Compote

A generous skillet pancake from German-speaking Alpine cooking, Kaiserschmarrn is torn into soft, irregular pieces rather than served whole. The batter is enriched with egg yolks, lightened with whisked whites and studded with plumped raisins, giving it a tender, slightly soufflé-like texture with golden, buttery edges. Traditionally enjoyed as a sweet main, dessert or café-style treat, it is finished with icing sugar and served warm. The apple compote brings tartness, gentle cinnamon warmth and enough fruitiness to cut through the richness of the pancake.

Why this recipe works

  • Classic torn texture: Cutting, flipping, and tearing the pancake in the pan creates irregular pieces with tender centres and lightly golden edges.
  • Balanced sweetness: Tart-sweet apples, lemon, and cinnamon keep the compote bright enough to balance the rich, buttery pancake.
  • Warm and generous: Served straight from the pan with warm fruit and icing sugar, it has the satisfying feel of a dessert while still being simple enough for everyday cooking.

Timing notes

  • Serve the pancake straight away: Kaiserschmarrn is at its best just after cooking, while the pieces are still light inside and golden at the edges.
  • Make the compote first: Starting with the apples lets the compote soften while the pancake batter is prepared, so both elements are ready to serve warm.
  • Best eaten fresh: Leftovers can be reheated, but the pancake loses some of its lightness after chilling.

Texture tips

  • Keep the batter airy: Fold the whipped egg whites in gently and stop as soon as no large streaks remain; overworking the batter will make the pancake heavier.
  • Control the pan heat: Use steady medium heat so the underside browns before flipping without the centre staying raw or the edges scorching.
  • Keep texture in the compote: Simmer the apples until tender but not fully collapsed for a compote that still has soft pieces rather than becoming a purée.

Ingredient notes

  • Choose firm apples: A firm tart-sweet apple holds its shape better in the compote and gives the dish a brighter finish.
  • Plump the raisins: Soaking the raisins briefly makes them softer and prevents them from drawing moisture from the pancake batter.
  • Use whole milk for richness: Whole milk gives the batter a fuller flavour and a softer crumb than leaner milk options.

Authenticity notes

  • Torn in the pan: The rough, torn pieces are part of the identity of Kaiserschmarrn, giving it a different texture from a standard pancake stack.
  • Fruit compote on the side: Warm fruit compote is a classic partner for the buttery pancake, adding moisture and contrast without needing a heavy sauce.

  1. Make the compote: peel, core and cut the apples into small chunks. Finely zest the lemon, then squeeze the juice. Put the apples, lemon zest and juice, caster sugar and cinnamon in a saucepan with 2 tbsp water and bring to a gentle simmer.
  2. Simmer the compote for 10 to 12 minutes, stirring now and then, until the apples are tender but not completely collapsed. Taste and add a little more lemon juice if you want it sharper. Keep warm on a very low heat while you make the pancake.
  3. Put the raisins in a small bowl and cover with hot water from the kettle; leave to plump for 5 minutes, then drain well. Separate the eggs, putting the whites in a clean mixing bowl and the yolks in another bowl. Add the milk and vanilla to the yolks and whisk to combine.
  4. Whisk the flour and caster sugar into the yolk mixture until smooth and thick. In the bowl with the whites, whisk to soft peaks. Fold the whites into the batter in two additions, keeping as much air as you can, then fold in the drained raisins.
  5. Heat a large frying pan over medium heat and melt half the butter, swirling to coat the base. Pour in the batter and cook for 3 to 4 minutes until the underside is golden and the top is starting to set. Dot the remaining butter over the top.
  6. Using a spatula, cut the pancake into quarters, flip the pieces, then tear into rough bite-sized pieces. Cook for 3 to 5 minutes, turning gently, until the pieces are cooked through and lightly golden at the edges. Dust generously with icing sugar and serve straight away with the warm apple compote.

Recipe notes

Tips

  • For the fluffiest result, make sure the bowl for the egg whites is completely clean and dry, and fold them in gently so you do not knock out the air.
  • If the pan is browning too quickly before the centre is set, turn the heat down slightly and give it an extra minute or two; the pieces should be tender inside, not doughy.
  • Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are stamped as suitable for eating raw or lightly cooked, and ensure the pancake is cooked through.

Substitutions

  • Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
  • Replace Raisin with sultana for a slightly juicier, milder sweetness.
  • Replace Ground cinnamon with a pinch of ground cardamom for a more aromatic compote.

Storage

  • Refrigerate up to 2 days
  • Kaiserschmarrn is best eaten straight away. Store leftovers and compote separately in airtight containers in the fridge, then reheat the pancake pieces in a frying pan with a small knob of unsalted butter over medium-low heat until piping hot; warm the compote gently in a saucepan.
