Croustade aux Pommes (Apple Pastry Tart)

In a croustade aux pommes, the focus is on clean apple flavour and crisp, buttery pastry rather than heavy filling. This Belgian apple tart pairs a short, tender pastry case with a thin layer of homemade apple compote, then finishes it with neatly overlapped slices of tart-sweet apple. The compote helps anchor the fruit and adds softness beneath the topping, while lemon, vanilla and a light touch of cinnamon keep the flavour bright and gently spiced. It is the kind of pastry that works well slightly warm or at room temperature, especially when the apples still hold their shape and the base stays crisp.

Why this recipe works

  • Crisp pastry, soft fruit: Cold butter and chilled pastry help the case bake up crisp, while the apples soften without turning mushy.
  • Fruit in two forms: A thin apple compote adds concentrated flavour beneath the sliced apple topping, giving the tart more depth than fruit alone.
  • Freshness from lemon: Lemon juice keeps the apples bright and balances the sweetness of the sugar and pastry.

Timing notes

  • Chill the pastry: The pastry needs time to firm up before rolling, which makes it easier to handle and helps the tart keep a neat shape.
  • Cool before slicing: Letting the tart stand in the tin briefly allows the fruit layer to settle and makes cleaner slices.
  • Best texture: Serve the tart warm or at room temperature; reheat slices in a 180°C (355°F) oven to refresh the pastry.

Texture tips

  • Keep the butter cold: Cold butter creates a shorter, crisper pastry; avoid overworking the dough once it comes together.
  • Use a thin compote layer: Spread the compote evenly but lightly so it flavours the base without weighing down the pastry.
  • Choose firm apples: Tart-sweet apples with good structure are best because they soften in the oven while still holding their slices.

Ingredient notes

  • Apple choice matters: Use firm apples rather than very soft varieties, as the topping should stay defined after baking.
  • Balance with lemon: A little extra lemon can sharpen the flavour if the apples are especially sweet.
  • Keep the spice gentle: Cinnamon should support the apple flavour rather than dominate the tart.

Make-ahead tips

  • Prepare the pastry first: The pastry disc can be made ahead and chilled until ready to roll.
  • Re-crisp before serving: Warm slices in a 180°C (355°F) oven for a few minutes to bring back the pastry’s crispness.
  • Best on the day it is baked: The tart keeps well in the fridge, but the pastry is at its crispest on the day of baking.

  1. Make the pastry: put the flour, 30 g caster sugar and salt in a bowl. Rub in the cold butter with your fingertips until it looks like fine crumbs. Beat in the egg until the dough just comes together, then press into a disc.
  2. Chill the pastry disc for 30 minutes so it is easy to roll and bakes up crisp. Meanwhile, lightly grease a 23 cm tart tin.
  3. Heat the oven to 190°C (375°F). Peel, core and slice the apples; keep 2 apples aside for the compote and slice the remaining apples thinly for the topping. Squeeze a little lemon juice over the sliced apples to prevent browning.
  4. Make the compote: cut the 2 reserved apples into chunks and put them in a saucepan with 30 g of the caster sugar, the vanilla extract and 2 tbsp lemon juice. Cook over a medium heat for 10 to 12 minutes, stirring, until the apples collapse into a thick purée. Cool for 5 minutes so it spreads easily.
  5. Roll the chilled pastry on a lightly floured surface to a round about 3 mm thick. Line the tart tin, pressing into the corners, then trim the edge. Prick the base all over with a fork.
  6. Spread the warm compote in a thin, even layer over the pastry base. Toss the sliced apples with the remaining 20 g caster sugar and the cinnamon, then arrange them neatly over the compote in overlapping circles.
  7. Bake for 40 to 45 minutes until the pastry is deep golden and the apples are tender when pierced with a knife. If the apples colour too quickly, lower the oven to 180°C (355°F) for the final 10 minutes. Cool in the tin for 15 minutes before slicing.

Recipe notes

Tips

  • For the crispest base, keep the butter cold and handle the pastry as little as possible.
  • If you have time, chill the lined tart tin for 10 minutes before filling; it helps the pastry hold its shape in the oven.
  • If serving vulnerable groups, use eggs that are produced under a recognised food safety standard.

Substitutions

  • Replace Vanilla extract with the finely grated zest of the Lemon for a brighter, citrus-led aroma.
  • Replace Ground cinnamon with 0.5 tsp Ground cinnamon for a milder spice note.

Storage

  • Refrigerate up to 3 days
  • Store covered in the fridge. Reheat slices in a 180°C (355°F) oven for 8 to 10 minutes to re-crisp the pastry, or serve at room temperature.
