Klenät (Nordic Fried Christmas Pastries with Cardamom)
Why this recipe works
- Classic shaping: The slit-and-twist method gives klenät their recognisable form and helps the thin dough fry evenly.
- Light, crisp finish: Rolling the dough very thin allows the pastries to puff and crisp quickly without becoming heavy.
- Subtle festive flavour: Cardamom brings warm Nordic spice while butter and eggs give the dough richness without making it overly sweet.

Timing notes
- Rest the dough briefly: The short rest helps the dough relax, making it easier to roll thinly without springing back.
- Dust just before serving: Add the icing sugar once the pastries are completely cool and close to serving time so it stays powdery.
- Best texture on the day: Klenät are at their crispest soon after frying, though they can be stored well once fully cooled.
Texture tips
- Roll the dough very thin: Aim for a thin sheet so the pastries cook through quickly and develop a delicate, crisp bite.
- Drain thoroughly: Lift the pastries from the oil and drain well before cooling to keep the finish light rather than greasy.
- Watch the colour: They should be pale golden, not dark brown; the thin dough cooks quickly once it hits the oil.
Common mistakes
- Letting the oil drift: Keep the oil around 175°C (350°F); too hot and the outside browns early, too cool and the pastries absorb oil.
- Frying too many at once: Cook in batches so the oil temperature stays steady and each pastry has room to puff.
- Leaving the dough too thick: Thicker pieces can stay doughy in the centre before the outside has finished colouring.
Make-ahead tips
- Make ahead for serving: Fry and cool the pastries in advance, then store them airtight and dust with icing sugar just before serving.
- Freeze without icing sugar: Freeze the cooled pastries plain, then thaw at room temperature and finish with icing sugar once ready to serve.
- Bring back to room temperature: If chilled, let the pastries lose their fridge-cold texture before serving for a better bite.

Instructions
- In a mixing bowl, whisk together the flour, caster sugar and ground cardamom. Rub in the butter with your fingertips until the mixture looks like fine crumbs. Make a well in the centre.
- Beat the eggs with the milk, then pour into the well. Mix to a soft dough, then knead briefly until smooth and elastic. Cover and rest for 15 minutes so the dough relaxes.
- Divide the dough in half and roll one portion very thin on a lightly floured surface, about 2 mm thick. Cut into rectangles about 10 x 5 cm, then cut a 4 cm slit down the centre of each. Pull one end through the slit to form a twist, then repeat with the remaining dough.
- Pour the sunflower oil into a large pot and heat to 175°C (350°F). Fry the pastries in batches for 1 to 2 minutes per side, turning once, until pale golden and puffed. Keep the oil temperature steady between batches.
- Lift out with tongs and drain well, then leave to cool completely. Dust generously with icing sugar just before serving so it stays powdery. Serve at room temperature.
Recipe notes
Tips
- Roll the dough as thinly as you can; thicker dough can stay doughy in the centre before the outside colours.
- Use a thermometer and keep the oil around 175°C (350°F); if it is too hot the pastries brown before they cook through, and if too cool they absorb oil.
- If you are serving young children or anyone vulnerable, use pasteurised eggs where available.
Substitutions
- Replace whole milk with water for a slightly crisper, less rich pastry.
- Replace caster sugar with icing sugar for a finer-textured dough.
Storage
- Refrigerate up to 2 days
- Store cooled pastries in an airtight container. For the best texture, keep at room temperature for up to 3 days; if refrigerated, bring back to room temperature before serving. Freeze without the icing sugar for up to 2 months, then thaw at room temperature and dust with icing sugar just before serving.
