Torcolo di San Costanzo (Umbrian Orange, Raisin and Almond Ring Cake)
Why this recipe works
- Enriched yeast dough: A slow-risen, butter-enriched dough gives the cake its recognisable tender crumb and bread-like structure.
- Citrus, fruit and nuts: Orange zest, raisins and almonds add aroma, sweetness and texture without making the cake heavy.
- Easy to serve: The ring shape slices neatly, making it practical for breakfast, coffee, dessert or a shared festive spread.

Timing notes
- Use the dough, not the clock: Proofing times can vary with room temperature; move on when the dough has doubled, feels airy and springs back slowly when pressed.
- Glaze while just warm: Let the cake cool enough to hold its shape before glazing. If it is too hot, the glaze will run off rather than setting cleanly.
- Best once set: Allow the glaze to firm before slicing so the top stays neat and the crumb remains intact.
Authenticity notes
- Umbrian character: Torcolo di San Costanzo is associated with Umbrian baking and is recognisable for its ring shape, citrus-scented dough, dried fruit and nuts.
- Yeasted rather than sponge-like: Unlike a standard butter cake, this version relies on yeast fermentation for lift, giving it a more bread-like chew and aroma.
- Nut variations: Almonds are classic here, but hazelnuts also suit the regional flavour profile and give a deeper toasted note.
Texture tips
- Add butter gradually: Let each addition of softened butter disappear into the dough before adding more; this helps create a smooth, elastic texture.
- Protect the crust: If the top colours too quickly, cover it loosely with foil near the end of baking so the inside can finish without the crust becoming too dark.
- Store well wrapped: As with most enriched yeast cakes, the crumb dries out if exposed to air, so keep it airtight once completely cool.
Make-ahead tips
- Bake ahead: The cake can be baked in advance and kept airtight at room temperature for short-term serving.
- Freeze in slices: Freeze well-wrapped slices, then defrost at room temperature for an easy portioned sweet bread.
- Refresh before serving: To revive the crumb after freezing, warm slices gently in a 160°C (320°F) oven until refreshed.

Instructions
- Warm the milk until just lukewarm, then pour it into the bowl of a stand mixer. Add the yeast and 1 tbsp of the caster sugar, stir, and leave for 5 minutes until lightly foamy.
- Add the flour, salt, dried orange zest, remaining caster sugar, eggs and vanilla extract. Mix with the dough hook on low speed until a shaggy dough forms, then knead for 6 to 8 minutes until smooth and elastic.
- With the mixer running on low, add the softened butter a little at a time, letting each addition disappear before adding more. Knead for 4 to 6 minutes until the dough is glossy and pulls away from the bowl.
- Tip the dough onto the work surface and knead in the raisins and almonds until evenly distributed. Shape into a ball, place in a lightly buttered bowl, cover, and leave to prove until doubled in size.
- Butter a ring cake tin, then turn out the dough and shape it into a thick rope. Join the ends to form a ring, place in the tin, cover, and prove until puffy and it slowly springs back when pressed.
- Heat the oven to 180°C (355°F). Bake for 30 to 35 minutes until deep golden and the cake sounds hollow when tapped; if it browns too quickly, loosely cover the top with foil for the final 10 minutes.
- Cool in the tin for 10 minutes, then turn out onto a rack to cool until just warm. Whisk the icing sugar with the milk to make a thick but pourable glaze, then drizzle over the cake and leave to set.
Recipe notes
Tips
- For the best rise, keep the dough somewhere draught-free; it is ready when it has doubled and feels airy when you lift it.
- If the glaze is too thick, add a few more drops of milk; if it is too thin, whisk in a little more icing sugar.
- If serving to young children, pregnant people, or anyone vulnerable, use eggs that are produced to be eaten lightly cooked and bake the cake until fully set and piping hot throughout.
Substitutions
- Replace almonds with hazelnuts for a more toasty, Umbrian-style nut flavour.
- Replace raisins with dried cranberries for a tarter fruit note.
- Replace vanilla extract with orange extract for a more pronounced citrus aroma.
Storage
- Refrigerate up to 3 days
- Store in an airtight container at room temperature for up to 2 days, or in the fridge for up to 3 days. Freeze slices well wrapped for up to 2 months; defrost at room temperature and refresh in a 160°C (320°F) oven for 5 to 8 minutes.
