Lebkuchen (German Spiced Honey Biscuits with Nuts)

Lebkuchen are German spiced honey biscuits with a soft, gently chewy crumb and a fragrant warmth from ginger, cinnamon and cloves. Often associated with festive baking, they sit somewhere between a biscuit and a small cake: tender rather than crisp, sweetened with honey and brown sugar, and enriched here with ground almonds and hazelnuts for a rounded nutty flavour. A lemon icing glaze gives the tops a light sharpness and sets to a delicate finish. They are especially good made ahead, as the texture softens and the spices settle after a day in an airtight tin.

Why this recipe works

  • Warm, layered spice: Honey, brown sugar, ginger, cinnamon and cloves create the deep aromatic flavour associated with classic lebkuchen.
  • Tender nutty crumb: Ground almonds and hazelnuts soften the dough and give the biscuits a gently chewy texture rather than a crisp snap.
  • Better after resting: The biscuits soften and become more rounded in flavour after a day in an airtight container.

Timing notes

  • Rest the sticky dough: A short stand after mixing lets the flour and ground nuts hydrate, making the dough easier to portion and shape.
  • Cool before glazing: Glaze only once the biscuits are completely cool, otherwise the icing will loosen and lose its smooth finish.
  • Best after a day: Lebkuchen are especially good the next day, once the spices have settled and the texture has softened.

Texture tips

  • Keep the centres soft: Remove the biscuits when they are puffed and just set; they should still feel slightly soft in the middle.
  • Shape with damp fingertips: Lightly damp hands help smooth the sticky dough into rounds without adding extra flour, which can toughen the crumb.
  • Let the glaze set fully: Leave the glazed biscuits at room temperature until the tops are dry to the touch before storing or serving.

Ingredient notes

  • Use runny honey: A smooth, pourable honey blends easily with the sugar and helps the dough come together evenly.
  • Spice freshness matters: Ground spices lose strength over time, so fresher ginger, cinnamon and cloves will give a more fragrant result.
  • Balance the glaze: Lemon gives the icing a clean sharpness; orange can be used for a softer, sweeter finish.

Make-ahead tips

  • Bake ahead: Store the finished biscuits in an airtight container at room temperature, where they keep well and gradually soften.
  • Freeze before glazing: Freeze the unglazed biscuits, then defrost fully at room temperature and glaze once thawed.

  1. Heat the oven to 170°C (340°F) and line two baking trays. Put the honey and light brown sugar in a saucepan over low heat and warm just until the sugar dissolves, then take off the heat and leave to cool for 5 minutes.
  2. Whisk the egg into the warm honey mixture until smooth. In a mixing bowl, whisk together the plain flour, baking powder, fine sea salt, ground ginger, ground cinnamon and ground cloves, then stir in the ground almonds and ground hazelnuts.
  3. Tip the wet mixture into the dry ingredients and mix with a spatula until you have a thick, sticky dough. Leave it to stand for 10 minutes so the flour and nuts hydrate and the dough becomes easier to portion.
  4. Scoop heaped teaspoons of dough onto the trays, spacing them well, then dampen your fingertips and gently pat each one into a round about 4 cm wide. Bake for 10 to 12 minutes, until puffed and just set; they should still feel soft in the centre.
  5. Leave the lebkuchen on the trays for 5 minutes, then transfer to a rack to cool completely. Sift the icing sugar into a bowl and squeeze in enough lemon juice to make a thick but brushable glaze.
  6. Brush the glaze over the cooled biscuits and leave at room temperature until set. Serve once the tops are dry to the touch.

Recipe notes

Tips

  • For soft lebkuchen, avoid overbaking: take them out when they look set but still feel slightly springy in the centre.
  • If the glaze is too runny, sift in a little more icing sugar; if it is too thick to brush, add a few drops more lemon juice.
  • If serving to young children, pregnant people, or anyone vulnerable, use a pasteurised egg.

Substitutions

  • Replace Ground hazelnuts with Ground almonds for an all-almond version with a slightly milder flavour.
  • Replace Lemon with Orange for a sweeter, less sharp glaze.

Storage

  • Store in an airtight container at room temperature for up to 7 days; they soften and improve after a day. Freeze unglazed biscuits for up to 2 months, then defrost at room temperature and glaze once fully thawed.
