Maritozzi con la Panna (Roman Cream Buns)
Why this recipe works
- Enriched dough: Butter, eggs, milk and sugar create the soft, tender crumb expected from maritozzi-style buns.
- Soft bun, cool cream: The fluffy baked dough is cooled fully before filling, so the whipped cream stays firm and cleanly defined.
- Gentle aromatic flavour: Lemon zest and vanilla add fragrance without overwhelming the buttery dough or cream filling.

Timing notes
- Let the dough guide the timing: Proving times may vary with room temperature; move on when the dough has doubled and the shaped buns look puffy and springy.
- Cool completely before filling: Warm buns will melt the cream and make the filling slide out, so allow them to cool fully on a rack.
- Best freshly filled: Maritozzi have the best contrast of soft bun and whipped cream on the day they are filled.
Texture tips
- Knead until elastic: After the butter is added, keep kneading until the dough becomes smooth, glossy and stretchy rather than sticky and loose.
- Avoid drying the buns: Bake just until evenly golden and hollow-sounding underneath; overbaking can make the enriched crumb dry.
- Shape tightly: Tension in the shaped buns helps them rise evenly and gives a smoother bakery-style surface.
Make-ahead tips
- Bake the buns ahead: The buns can be baked in advance and filled shortly before serving for the cleanest texture.
- Freeze unfilled buns: Freeze the baked buns without cream, then defrost at room temperature before refreshing in a 160°C (320°F) oven and cooling again before filling.
- Keep cream separate: For the best result, store unfilled buns separately from the whipped cream and assemble only when ready to serve.
Authenticity notes
- Roman pastry style: Maritozzi con la panna are strongly associated with Rome, where the cream-filled version is one of the most recognisable forms.
- Serve with coffee: Their sweet, creamy richness works especially well with espresso, cappuccino or other strong coffee.

Instructions
- Warm the milk in a saucepan until just lukewarm, then pour into the bowl of a stand mixer. Add the yeast and 1 tsp of the caster sugar, stir, and leave for 5 minutes until lightly foamy.
- Finely zest the lemon. Add the flour, remaining caster sugar, salt, lemon zest, eggs and vanilla to the bowl, then mix with the dough hook on low until a shaggy dough forms.
- Increase to medium speed and knead for 8 to 10 minutes until the dough is smooth and elastic. Add the butter a little at a time, kneading until fully incorporated and the dough is glossy and stretchy.
- Shape the dough into a ball and place in a lightly greased mixing bowl. Cover and leave to prove in a warm place for 60 to 75 minutes, until doubled in size.
- Tip the dough onto a clean work surface and divide into 8 equal pieces. Shape each into a tight bun, place on a baking tray with space between, cover, and prove for 30 to 40 minutes until puffy and springy.
- Heat the oven to 180°C (355°F). Bake the buns for 14 to 16 minutes until evenly golden and they sound hollow when tapped underneath.
- Transfer the buns to a cooling rack and leave to cool completely. If you fill them warm, the cream will melt and slide out.
- Whisk the double cream with the caster sugar and vanilla until it holds firm peaks. Split each bun lengthways, without cutting all the way through, then pipe or spoon in the cream so it sits generously above the cut.
Recipe notes
Tips
- For the best rise, aim for a warm proving spot around 24 to 27°C, and stop the first prove when the dough has clearly doubled.
- If the dough feels sticky after adding the butter, keep kneading; it will tighten and become smooth once the gluten develops.
- If you are pregnant, elderly, or immunocompromised, use pasteurised eggs and ensure the cream is kept properly chilled.
Substitutions
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace Lemon with orange for a softer citrus aroma in the dough.
Storage
- Refrigerate up to 1 days
- For best texture, fill and serve the same day. Unfilled buns can be frozen for up to 1 month; defrost at room temperature, then refresh in a 160°C (320°F) oven for 5 minutes and cool before filling. Filled buns keep in the fridge for up to 1 day, but the buns will soften.
