Tomatensoep met Balletjes (Tomato Soup with Meatballs)

In Belgium, tomato soup with small meatballs is a familiar comfort dish, often served as a warming starter but hearty enough for a simple lunch. The soup is centred on a smooth tomato base enriched with onion, carrot, celery and beef stock, giving it more depth than a plain purée. Tiny beef and pork meatballs are poached directly in the simmering soup, so they stay tender while seasoning the broth. A little double cream softens the acidity of the tomatoes, and fresh parsley adds a clean finish. It is straightforward, satisfying and especially good when served hot with bread alongside.

Why this recipe works

  • Rounded tomato base: Tomato purée, ripe tomatoes and softened aromatics give the soup a fuller savoury flavour before blending.
  • Classic comfort: Small meatballs poached in the soup make it more substantial while keeping the dish gentle and homely.
  • Smooth finish: Blending the vegetables creates a silky base, while a little cream softens the acidity of the tomatoes.
  • Efficient method: The meatballs cook directly in the soup, adding flavour to the broth and avoiding a separate pan.

Texture tips

  • Keep the meatballs tender: Poach them at a gentle simmer rather than a boil; aggressive bubbling can make the meatballs firm and cloud the soup.
  • Blend thoroughly: Make sure the vegetables are very tender before blending so the soup turns smooth without needing extra cream.
  • Add cream gently: Once the cream is added, keep the heat low and avoid boiling to help the soup stay smooth.

Make-ahead tips

  • Cook ahead: The soup can be made in advance and kept chilled, making it useful for quick lunches or a prepared starter.
  • Reheat carefully: Warm it gently in a saucepan until piping hot, stirring often and avoiding a hard boil if the cream has already been added.
  • Freeze for later: Freeze once completely cooled, then defrost overnight in the fridge before reheating gently.

Ingredient swaps

  • Tangier finish: Crème fraîche can replace double cream for a slightly sharper, more cultured flavour; stir it in off the heat.
  • All-beef meatballs: Use extra minced beef instead of pork if you prefer a firmer, beefier meatball.

Authenticity notes

  • Belgian home-style soup: This style of tomato soup is commonly associated with simple home cooking: smooth tomato broth, small meatballs and a parsley finish.
  • Best served hot: Serve in warm bowls as a starter or light meal, with the meatballs distributed evenly through the soup.

  1. Finely dice the yellow onion, carrot and celery. Thinly slice the garlic. Roughly chop the tomatoes.
  2. Put the onion, carrot and celery into a large pot with a splash of beef stock and cook over medium heat for 6 to 8 minutes, stirring, until softened. Stir in the garlic and tomato purée and cook for 1 minute until fragrant.
  3. Add the tomatoes, remaining beef stock, fine sea salt and black pepper. Bring to a gentle simmer and cook for 15 minutes, stirring occasionally, until the vegetables are very tender.
  4. Blend the soup until smooth using an immersion blender. Return to a gentle simmer and taste for seasoning.
  5. In a mixing bowl, combine the minced beef and minced pork with a pinch of the fine sea salt and a little of the black pepper from the measured amounts. Roll into small meatballs, about the size of a cherry.
  6. Drop the meatballs into the gently simmering soup. Poach for 10 to 12 minutes, stirring once or twice, until the meatballs are cooked through and tender.
  7. Turn the heat to low and stir in the double cream. Finely chop the fresh parsley and stir most of it through, saving a little to finish.
  8. Ladle into bowls and sprinkle with the remaining parsley. Serve hot.

Recipe notes

Tips

  • Keep the soup at a gentle simmer when poaching the meatballs; a hard boil can make them tough and may cloud the soup.
  • After adding the double cream, keep the heat low and do not let the soup boil to prevent splitting.
  • If serving vulnerable groups, make sure the meatballs are cooked through and the soup is piping hot before serving.

Substitutions

  • Replace double cream with crème fraîche for a slightly tangier finish; stir it in off the heat.
  • Replace minced pork with more minced beef for all-beef meatballs.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low to medium heat until piping hot, stirring often; avoid boiling once reheated if the double cream is already in the soup. Freeze for up to 3 months; defrost overnight in the fridge before reheating.
