Minestrone Genovese with Pesto
Why this recipe works
- Built on a classic base: Onion, celery and carrot are softened first, giving the soup a savoury foundation before the stock, potatoes and beans are added.
- Naturally hearty texture: Potatoes, cannellini beans and pastina give the broth body without needing cream or extra thickener.
- Fresh pesto finish: Stirring the pesto in off the heat preserves its basil fragrance and keeps the flavour bright.

Authenticity notes
- Genovese character: The basil pesto finish is what sets this version apart from many other minestrone recipes, giving the soup its Ligurian identity.
- A flexible vegetable soup: Minestrone is commonly adapted to what is available, but this version keeps the focus on beans, potatoes, small pasta and pesto.
Timing notes
- Best after a short stand: Letting the soup sit briefly before serving gives the pastina time to settle and slightly thicken the broth.
- Active cooking is front-loaded: Most of the hands-on work is chopping and softening the vegetables; after that, the soup mainly needs gentle simmering and occasional stirring.
Texture tips
- For a thicker bowl: Let the soup stand off the heat before serving so the pasta and potatoes absorb more of the broth.
- To loosen leftovers: Add a little extra vegetable stock when reheating, as the pastina will continue to absorb liquid in the fridge.
Make-ahead tips
- Make ahead with care: The soup can be refrigerated, but the pasta will soften as it sits, so cook it only until just tender if you plan to serve it later.
- Reheat gently: Warm the soup over a low to medium heat until piping hot, stirring regularly and loosening with stock if needed.

Instructions
- Heat the olive oil in a large pot over a medium heat. Add the onion, celery and carrot, then season with the salt and pepper. Cook for 8 to 10 minutes, stirring often, until softened but not browned.
- Add the potatoes and stir for 1 minute to coat in the oil. Pour in the vegetable stock and bring to a gentle simmer. Cook for 12 to 15 minutes, until the potatoes are just tender.
- Stir in the cannellini beans and return to a steady simmer. Add the pastina and cook for 6 to 8 minutes, stirring occasionally, until the pasta is tender. If the soup looks too thick, add a splash more stock from the measured amount in the pot and keep it gently simmering.
- Take the pot off the heat and stir in the basil pesto until fully dispersed. Taste and adjust with a little more salt and pepper if needed. Ladle into bowls and serve hot.
- Let the soup stand for 10 minutes before serving if you prefer a slightly thicker, more settled texture. Give it a final stir, as the pastina can sink. Serve straight away.
Recipe notes
Tips
- Keep the soup at a gentle simmer once the pasta goes in and stir regularly so the pastina does not catch on the base of the pot.
- Stir in the basil pesto off the heat to keep its fresh basil flavour bright and to prevent it splitting.
- If serving later, cook the pastina until just tender, as it will continue to soften as the soup stands.
Substitutions
- Replace Pastina with orzo for a similar small-pasta texture; cook until just tender.
- Replace Basil pesto with pesto for a slightly different herb balance, then adjust the salt to taste.
- Replace Yukon Gold potato with new potatoes for a firmer bite.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over a low to medium heat until piping hot, adding a splash of vegetable stock to loosen as the pasta will continue to absorb liquid.
