Sopa de Galets (Catalan Pasta Soup with Beef and Chicken Stock)
Why this recipe works
- Deep stock flavour: Browning the beef and chicken before simmering gives the broth a fuller, more savoury base.
- Classic slow simmer: A gentle, extended simmer extracts flavour from the bones, meat and vegetables without making the broth harsh or muddy.
- Flexible serving: The soup can be served simply with pasta, or made heartier by adding some of the cooked meat back to the pot.

Timing notes
- Serve soon after adding pasta: Large pasta shells continue to absorb broth as they sit, so the best texture comes from cooking them shortly before serving.
- Mostly hands-off time: The active work is mainly browning, chopping and straining; most of the recipe time is the stock simmering gently.
Authenticity notes
- Catalan soup style: Sopa de galets is closely associated with Catalan cooking and is especially recognisable for its large shell-shaped pasta.
- Meat can be served or omitted: Some versions serve the broth and pasta alone, while others return shredded meat to the soup for a more substantial bowl.
Make-ahead tips
- Keep broth and pasta separate: For the best texture, store the strained stock separately and add freshly cooked or reheated pasta just before serving.
- Freeze the stock only: The broth freezes well without pasta; defrost it in the fridge before reheating until piping hot.
- Reheat gently but thoroughly: Warm the stock in a saucepan until piping hot throughout, then add the pasta just long enough to heat through.
Common mistakes
- Boiling the stock too hard: A rolling boil can make the broth cloudy and rough-tasting; keep it at a gentle simmer and skim the surface as needed.
- Letting the pasta sit too long: Galets can swell and drink up the broth if left in the soup, so avoid holding the finished soup for too long before serving.

Ingredients
Instructions
- Heat the olive oil in a stockpot over medium heat. Add the beef shank and chicken thighs and cook for 6 to 8 minutes, turning occasionally, until lightly browned.
- Add the carrot, leek, celeriac and garlic, and cook for 3 to 4 minutes to lightly soften. Add the black peppercorns, fine sea salt and water, scraping up any browned bits from the base of the pot.
- Bring to a gentle simmer, then reduce the heat to low and cook uncovered for 1 hour 45 minutes, skimming any foam from the surface as needed. The stock is ready when it tastes rich and the meat is tender.
- Lift out the beef and chicken, then strain the stock through a colander into a clean pot. Taste and adjust the salt, keeping the broth well seasoned as the pasta will absorb some of it.
- Bring the strained stock back to a simmer and add the pasta shells. Cook for 10 to 14 minutes, stirring occasionally, until the pasta is tender but still holds its shape.
- Serve the soup piping hot, making sure each bowl gets plenty of broth and pasta. If you like, shred a little of the cooked meat and add it back to the pot before serving.
Recipe notes
Tips
- For a clearer broth, keep the stock at a gentle simmer rather than a rolling boil, and skim the surface during the first 30 minutes.
- If serving later, cook the pasta shells separately in salted water and add to the hot broth just before serving to stop them swelling and drinking up the stock.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the soup is reheated until piping hot throughout.
Substitutions
- Replace beef shank with beef marrow bones for a lighter stock, then simmer for the same time.
- Replace chicken thighs with a whole chicken for a rounder flavour; remove the breast meat after about 45 minutes to stop it drying out, then return the rest to finish the stock.
- Replace celeriac with parsnip for a slightly sweeter, softer vegetable note.
Storage
- Refrigerate up to 3 days
- Cool the strained stock quickly and refrigerate. For best texture, store the pasta separately from the broth; reheat the broth in a saucepan until piping hot, then add the pasta to warm through. Freeze the stock (without pasta) for up to 3 months and defrost overnight in the fridge before reheating.
