Hyderabadi Biryani (Layered Spiced Rice)

Hyderabadi biryani is one of India’s most recognisable layered rice dishes, prized for its fragrant basmati, spiced meat and slow, enclosed cooking that lets steam carry flavour through the pot. Here, yoghurt-marinated bone-in chicken forms the savoury base, while parboiled rice, whole cardamom, cinnamon, cloves, fried onions, mint, coriander and saffron build distinct aromatic layers. The finished biryani should have tender chicken, separate grains of rice and pockets of onion-rich juices rather than a uniform mix. Serve it hot with lemon wedges or raita to sharpen the spices and add freshness.

Why this recipe works

  • Layered cooking: Parboiled rice finishes steaming over the marinated chicken, helping the grains stay distinct while absorbing the aromatic juices below.
  • Built-in fragrance: Whole spices, saffron, fried onions, mint and coriander create flavour through the layers rather than relying on a heavy sauce.
  • Balanced richness: Yoghurt in the marinade and lemon at the table cut through the ghee and onions, keeping the biryani rich but not heavy.

Timing notes

  • Marinate for flavour: The chicken needs at least 45 minutes to absorb the yoghurt, ginger, garlic and chilli; refrigerating it overnight gives a deeper flavour.
  • Rest before serving: Keeping the pot covered off the heat for 10 minutes lets the steam settle and makes the rice easier to lift without breaking.
  • Plan the stages: Most of the work is in marinating, frying onions and parboiling rice; once layered, the final cooking is gentle and largely hands-off.

Texture tips

  • Keep the rice separate: Rinse, soak and drain the basmati well, then layer it while hot so it steams through rather than turning wet or clumpy.
  • Cook low and slow: The final covered cook should stay on the lowest heat, giving the chicken time to become tender without scorching the bottom layer.

Adjust the heat

  • For a milder biryani: Reduce the Kashmiri chilli and serve with plenty of raita to soften the spice without losing the dish’s colour and warmth.
  • For more heat: Add extra Kashmiri chilli to the marinade, or include a hotter chilli alongside it if you prefer a sharper finish.

Serving ideas

  • Serve with raita: A cool yoghurt raita is the classic contrast to the spiced rice and rich chicken.
  • Finish with lemon: Lemon wedges add brightness at the table and help balance the ghee, onions and spices.

  1. In a mixing bowl, whisk the yogurt with the garlic and ginger (finely grated), Ground Kashmiri chili and 2 tsp of the Fine sea salt. Add the chicken thighs and turn well to coat. Cover and marinate for 45 minutes at room temperature, or refrigerate up to overnight.
  2. Meanwhile, rinse the basmati rice in several changes of cold water until the water runs mostly clear, then soak it in cold water for 20 minutes. Drain well in a colander and set aside. Put the saffron in a small saucepan with the hot water and leave to infuse.
  3. Thinly slice the yellow onions. Heat the ghee in a dutch oven over medium heat, then fry the onions, stirring often, for 15 to 20 minutes until deep golden and sweet. Lift out half the onions for layering, leaving the rest in the pot.
  4. Add the marinated chicken to the pot and spread it out in an even layer. Cook over medium heat for 6 to 8 minutes, turning once, until the yogurt looks set and the chicken has started to turn opaque. Turn the heat down low and keep the chicken in a single layer.
  5. Bring a large pot of water to the boil and season it with the remaining 2 tsp Fine sea salt. Add the green cardamom pods, cinnamon sticks and whole cloves, then add the drained rice. Boil for 5 to 6 minutes until the grains are about three-quarters cooked, then drain well.
  6. Roughly tear the fresh mint and fresh coriander. Scatter half the reserved fried onions over the chicken, then add half the herbs. Spoon over half the rice, then repeat with the remaining onions, herbs and rice, keeping the top layer fluffy rather than packed down.
  7. Drizzle the saffron water evenly over the top. Cover the pot tightly with a lid and cook on the lowest heat for 25 to 30 minutes until the chicken is tender and the rice is fully cooked and fragrant. Rest off the heat, still covered, for 10 minutes.
  8. Cut the lemon into wedges. Gently lift and fold the biryani with tongs so you keep some of the layers intact, then serve hot with lemon wedges for squeezing over. If you like, spoon a little of the onion-rich juices from the bottom over each portion.

Lemon wedges Raita

Tips

  • For the best texture, drain the parboiled rice very well, then layer it while it is still hot so it finishes steaming rather than turning soggy.
  • Keep the heat very low during the final cook; if you smell scorching, move the pot to a cooler ring and continue gently until the rice is tender.
  • If serving vulnerable groups, make sure the chicken is cooked until piping hot throughout with no pink at the bone.

Substitutions

  • Replace Ghee with Unsalted butter for a similar richness, but keep the heat slightly lower to prevent it browning too quickly.
  • Replace Chicken thighs with Chicken breast bone-in skin-on, but reduce the final covered cook by about 5 minutes to avoid drying out.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in a sealed container. Reheat in a covered saucepan with a splash of water over low heat, or in a 180°C (355°F) oven covered until piping hot; freeze for up to 2 months and defrost overnight in the fridge before reheating.
