Fusion Pork Rice Bowl
Why this recipe works
- Layered savoury flavour: Garlic, ginger, soy sauce, sesame oil and browned pork build a strong umami base without needing a long simmer.
- Bright finish: Rice vinegar and lime cut through the richness of the pork and keep the bowl lively rather than heavy.
- Fresh contrast: Warm rice and glossy pork are balanced by crisp cucumber, spring onion and sesame seeds.
- Easy to adjust: Chilli oil, lime and extra seasoning can be added to taste at the end, making each bowl easy to tailor.

Adjust the heat
- For a milder bowl: Use only a small drizzle of chilli oil, or serve it on the side so each person can add their own.
- For more heat: Add extra chilli oil just before serving, where its flavour stays fresh and punchy.
- Keep it balanced: If the heat feels too sharp, add a little more lime or cucumber to bring back freshness.
Ingredient notes
- Choose pork with some fat: Minced pork with a little fat browns better and gives the sauce a juicier, more savoury finish.
- Add acidity off the heat: Stirring in the vinegar and lime after cooking keeps the flavour bright rather than cooked down.
- Use jasmine rice for fragrance: Jasmine rice suits the bowl well because its soft texture and aroma work with the soy, ginger and sesame flavours.
Make-ahead tips
- Keep the fresh toppings separate: Store the pork and rice apart from the cucumber and spring onion so the toppings stay crisp.
- Reheat gently: Warm the rice and pork until piping hot, adding a splash of water if needed to loosen the texture.
- Freeze the pork only: The cooked pork freezes well, but the fresh vegetables are best sliced just before serving.
Common mistakes
- Crowding the wok: Too much pork in a small pan can steam instead of brown, reducing the savoury depth of the dish.
- Burning the aromatics: Garlic and ginger only need a brief stir-fry before the pork goes in; if they darken too much, they can taste bitter.
- Overcooking the pork: Cook the mince until browned and cooked through, then finish with the sauce ingredients rather than continuing to fry it for too long.

Ingredients
Instructions
- Cook the jasmine rice in a saucepan of boiling water for 10 to 12 minutes, or until tender. Drain well, then cover and keep warm.
- Meanwhile, slice the cucumber and finely slice the spring onion. Finely grate the garlic and ginger, and cut the lime into wedges.
- Heat the sesame oil in a wok over medium-high heat. Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
- Add the minced pork and stir-fry, breaking it up, for 6 to 8 minutes until browned and cooked through. Stir in the brown sugar and soy sauce and cook for 1 minute until glossy and savoury.
- Take the wok off the heat and stir in the rice vinegar and a squeeze of lime. Taste and add a little more lime juice if you want it sharper.
- Divide the rice between bowls and spoon the pork over the top. Finish with cucumber, spring onion and sesame seeds, then drizzle with chilli oil to taste.
Recipe notes
Tips
- For the best texture, let the pork sit undisturbed for 1 minute before stirring so it takes on a deeper brown, then break it up and continue frying.
- If cooking for vulnerable groups, make sure the pork is piping hot all the way through with no pink remaining.
Substitutions
- Replace rice vinegar with white wine vinegar for a slightly rounder acidity.
- Replace brown sugar with honey for a softer sweetness.
Storage
- Refrigerate up to 3 days
- Store the pork and rice separately if possible, and keep the cucumber and spring onion separate for crunch. Reheat rice and pork in the microwave or in a saucepan with a splash of water until piping hot. Freeze only the cooked pork for up to 2 months; defrost overnight in the fridge before reheating.
