Fusion Pork Noodle Bowl
Why this recipe works
- Layered savoury base: Garlic, ginger, soy sauce and browned pork create a concentrated, umami-rich coating for the noodles.
- Fresh crunch: Cool cucumber, carrot and coriander balance the warm noodles and pork with crispness and freshness.
- Adjustable finish: Lime wedges and chilli oil are added at the end, making it easy to sharpen the acidity or increase the heat to taste.

Adjust the heat
- For a milder bowl: Use sesame oil instead of chilli oil at the finish, then add extra lime for brightness.
- For more heat: Add more chilli oil at the table rather than in the wok, so the noodles stay balanced and each bowl can be seasoned individually.
Texture tips
- Keep the noodles springy: Rinse the cooked rice noodles briefly and shake off excess water well before tossing them through the pork.
- Keep the toppings distinct: Add the cucumber, carrot and coriander after cooking so they stay crisp rather than softening in the wok.
Make-ahead tips
- Store fresh toppings separately: Keep the cucumber and carrot apart from the pork and noodles if storing leftovers, so they retain their crunch.
- Reheat gently with moisture: Warm the pork and noodles with a small splash of water until piping hot, then add the fresh toppings just before serving.
Ingredient notes
- Choose rice noodles by texture: Medium or flat rice noodles work well here because they can hold the savoury pork coating without becoming heavy.
- Balance the vinegar and lime: Rice vinegar gives the noodles a gentle tang, while fresh lime added at the end keeps the bowl bright and aromatic.

Ingredients
Instructions
- Cook the rice noodles in a large pot of boiling water until just tender, following the packet timing. Drain in a colander and rinse briefly under cold water, then shake well to remove excess water.
- Cut the cucumber into thin matchsticks and peel the carrot into ribbons or fine shreds. Roughly chop the fresh coriander, finely grate the garlic and ginger, and cut the lime into wedges.
- Heat the sesame oil in a wok over medium-high heat. Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
- Add the minced pork and stir-fry for 6 to 8 minutes, breaking it up, until browned and cooked through. Stir in the soy sauce and cook for 1 minute.
- Add the drained noodles to the wok, then pour in the rice vinegar and squeeze in half the lime. Toss for 1 to 2 minutes until the noodles are hot and coated; loosen with a tiny splash of water if needed.
- Divide between bowls and top with cucumber, carrot and fresh coriander. Finish with chilli oil and serve with the remaining lime wedges for squeezing.
Recipe notes
Tips
- Rinsing the noodles briefly after draining stops them sticking, and helps them stay springy when tossed through the pork.
- If cooking for vulnerable groups, make sure the pork is piping hot all the way through with no pink remaining.
Substitutions
- Replace rice vinegar with white wine vinegar for a slightly gentler tang.
- Replace chili oil with sesame oil for a milder finish.
Storage
- Refrigerate up to 2 days
- Refrigerate leftovers in an airtight container, ideally keeping the cucumber and carrot separate. Reheat the noodle and pork mixture in a wok or microwave with a splash of water until piping hot, then add the fresh toppings.
