Käsespätzle (German Cheese Noodles with Caramelised Onions)
Why this recipe works
- Deep savoury flavour: Slowly caramelised onions bring sweetness and depth to balance the salty, nutty cheese.
- Soft, cheesy texture: Fresh spätzle absorb the melted cheese as the dish bakes, giving the noodles a rich, cohesive finish.
- Simple spätzle method: Pushing the elastic batter through a colander creates small, tender noodles without specialist equipment.

Timing notes
- Build the recipe in parallel: Start the onions first, then prepare the batter, cheese and water while they cook slowly to a deep golden colour.
- Best served hot: Serve straight from the oven while the cheese is melted and bubbling; the texture firms as it cools.
Texture tips
- Control the batter: The batter should be thick and elastic but still able to pass through the colander; loosen it gradually with a little more milk if needed.
- Drain the spätzle well: Let excess water run off before layering so the finished bake stays cheesy rather than watery.
Ingredient notes
- Choose a good melting cheese: Emmental gives a mild, nutty flavour and smooth melt; Gruyere makes the dish slightly stronger and more savoury.
- Use nutmeg sparingly: A little nutmeg adds warmth to the dough without making the finished dish taste sweet.
Make-ahead tips
- Reheat gently: Reheat leftovers in a 180°C (355°F) oven until piping hot, adding a little butter on top to help keep the noodles moist.
- Freeze in portions: Cool completely, freeze in sealed portions, then thaw overnight in the fridge before reheating.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Halve and thinly slice the onions.
- Melt the butter in a large frying pan over medium-low heat. Add the onions and a pinch of the salt, then cook for 20 to 25 minutes, stirring often, until deeply golden and caramelised.
- Meanwhile, bring a large pot of well-salted water to the boil. Grate the cheese and set it aside.
- In a mixing bowl, whisk together the flour, remaining salt and nutmeg. Whisk in the milk and eggs to make a thick, elastic batter, then rest it for 5 minutes while the water comes back to a steady boil.
- Working in batches, push the batter through a colander held over the boiling water so small noodles drop in. Cook for 2 to 3 minutes, until the spätzle float and are just tender, then lift out with a slotted spoon and drain well.
- Butter a baking dish with a little of the remaining butter. Layer half the spätzle, half the onions and half the cheese, then repeat, finishing with cheese on top.
- Bake for 8 to 10 minutes, until the cheese is fully melted and bubbling at the edges. Serve hot with black pepper over the top.
Recipe notes
Tips
- Keep the onions on medium-low heat and stir regularly; slow cooking is what gives you deep caramelisation without burning.
- If the batter feels too stiff to push through the colander, whisk in a splash more milk; it should be thick but flow slowly.
- For anyone who should avoid raw or undercooked eggs, make sure the spätzle are cooked through and the finished dish is piping hot.
Substitutions
- Replace Emmental cheese with Gruyere cheese for a slightly nuttier flavour and stronger melt.
- Replace Whole milk with Low-fat milk for a lighter result, though the spätzle will be a little less rich.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven until piping hot, adding a few small knobs of unsalted butter on top to help it stay moist; freeze portions for up to 2 months and thaw overnight in the fridge before reheating.
