Lasagne al Forno (Classic Baked Lasagne)
Why this recipe works
- Deep ragù flavour: Browning the beef, reducing the wine and simmering the passata create a savoury sauce with enough body to sit neatly between the pasta layers.
- Creamy, structured layers: Béchamel coats the pasta as it bakes, keeping the lasagne soft and rich while helping the layers bind together.
- Built for sharing: The baked dish format makes it easy to portion for family dinners or guests, especially once the lasagne has rested after baking.

Timing notes
- Most work happens early: The chopping, browning and béchamel-making require attention at the start; once layered, the oven does most of the remaining work.
- Do not skip the rest: Resting the lasagne for 10 minutes lets the sauces settle and the layers firm up, making it much easier to slice cleanly.
Make-ahead tips
- Make the sauces in advance: The ragù and béchamel can be prepared ahead and chilled separately. Warm the béchamel gently if it thickens too much before assembling.
- Freeze cooked portions: Cool completely, portion and wrap well before freezing. Defrost overnight in the fridge before reheating.
- Reheat thoroughly: Reheat covered in a 180°C (355°F) oven until piping hot throughout, uncovering near the end if the top needs refreshing.
Common mistakes
- Leaving the ragù too loose: A watery ragù can make the layers slide. Simmer it uncovered until thick, rich and spoonable before assembling.
- Boiling the sauce too hard: Keep the ragù at a gentle simmer so it reduces evenly without catching on the base of the pot.
- Over-browning the top: If the cheese colours before the centre is hot, loosely cover the dish and continue baking rather than increasing the oven temperature.
Ingredient notes
- Choose suitable pasta sheets: Use lasagne sheets suited to baking. If your sheets require pre-cooking, prepare them according to the packet before layering.
- Balance the cheeses: Grana Padano gives a mellow savoury finish; Parmesan can be used for a sharper flavour. Mozzarella adds melt rather than strong seasoning.
- Use whole milk for béchamel: Whole milk gives the sauce better body and a rounder flavour, helping it coat the pasta evenly.

Instructions
- Heat the olive oil in a large pot over medium heat. Finely chop the onion, carrot and celery, then cook with a pinch of the fine sea salt for 8 to 10 minutes until softened and sweet-smelling.
- Add the minced beef and cook for 8 to 10 minutes, breaking it up with a wooden spoon, until browned and any liquid has evaporated. Pour in the dry red wine and simmer for 3 to 4 minutes until reduced by about half.
- Stir in the tomato passata and the remaining fine sea salt. Bring to a gentle simmer, then cook uncovered on low heat for 45 minutes, stirring occasionally, until thick and rich.
- While the ragù simmers, make the béchamel: melt the unsalted butter in a saucepan over medium heat. Stir in the plain flour and cook for 1 to 2 minutes, then gradually whisk in the whole milk until smooth; simmer gently for 6 to 8 minutes until thick enough to coat the back of a spoon, then whisk in the ground nutmeg.
- Heat the oven to 190°C (375°F). Grate the Grana Padano cheese and tear the mozzarella into small pieces.
- Spread a thin layer of ragù in the base of a baking dish, then add a layer of lasagna noodles. Spoon over more ragù, then béchamel, and scatter over a little mozzarella and Grana Padano; repeat the layers, finishing with béchamel and the remaining cheeses on top.
- Bake for 30 to 35 minutes until bubbling at the edges and golden on top. If it browns too quickly, loosely cover the top and continue baking.
- Rest the lasagne for 10 minutes before slicing, so the layers set and portions stay neat. Serve hot.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the ragù at a gentle simmer rather than a rapid boil so it reduces without catching on the base of the pot.
- For a smoother béchamel, warm the whole milk slightly before whisking it into the butter and flour.
- If serving vulnerable groups, ensure the lasagne is baked until piping hot throughout.
Substitutions
- Replace Grana Padano cheese with parmesan for a slightly sharper finish.
- Replace Dry Red Wine with dry white wine for a lighter ragù.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate for up to 3 days. Freeze portions well wrapped for up to 2 months; defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot.
