Fusion Beef and Rice Bowl
Why this recipe works
- Weeknight speed: Minced beef cooks quickly and absorbs the soy, sugar and sesame seasoning without needing a long simmer.
- Clean finish: A squeeze of lime balances the richness of the beef and keeps the bowl from tasting heavy.
- Fresh crunch: Cool cucumber and spring onion contrast with the warm rice and glossy beef for a more complete bowl.

Ingredient notes
- Use fragrant rice: Jasmine rice suits the sesame, soy and lime flavours because it stays aromatic and slightly soft without becoming heavy.
- Manage beef richness: If the mince releases a lot of fat, spoon off a little before adding the soy sauce so the glaze stays savoury rather than greasy.
- Keep toppings crisp: Slice the cucumber just before serving, or keep it separate if preparing portions ahead.
Make-ahead tips
- Separate the fresh elements: Store the beef and rice together, but keep cucumber, lime, spring onion and sesame seeds separate until serving for the best texture.
- Reheat before topping: Warm the rice and beef until piping hot, then add the cold cucumber and lime so the bowl keeps its contrast.
Serving ideas
- Add extra crunch: Snap peas, shredded carrot or lightly pickled vegetables work well if you want a more substantial topping.
- Finish with sesame: Toasted sesame seeds add a nuttier aroma and make the simple bowl feel more complete.

Ingredients
Instructions
- Rinse the jasmine rice in cold water until the water runs mostly clear. Add the rice and water to a saucepan, bring to the boil, cover, then cook on the lowest heat for 12 minutes; take off the heat and leave covered for 10 minutes.
- Meanwhile, slice the cucumber thinly. Thinly slice the spring onion, keeping a small handful aside for topping, and finely chop the garlic.
- Heat the wok over medium-high heat, then add the minced beef and cook for 5 to 7 minutes, breaking it up, until browned. Add the garlic and most of the spring onion and stir-fry for 1 minute until fragrant.
- Stir in the soy sauce and brown sugar and cook for 1 to 2 minutes until the beef is glossy and the liquid clings to the mince. Turn off the heat and stir in 1 tsp sesame oil.
- Fluff the rice and divide between bowls. Top with the beef, cucumber and reserved spring onion, then drizzle with the remaining sesame oil and squeeze over lime; finish with sesame seeds.
Recipe notes
Tips
- For extra fragrance, toast the sesame seeds in a dry wok for 1 to 2 minutes until they smell nutty, then tip them onto a plate before cooking the beef.
- If the beef releases a lot of fat, carefully spoon off a little before adding the soy sauce so the bowl tastes clean and not greasy.
Substitutions
- Replace brown sugar with honey for a softer sweetness and a slightly stickier glaze.
- Replace cucumber with snap peas for a crunchier, more substantial topping.
Storage
- Refrigerate up to 2 days
- Store the rice and beef together in a sealed container, and keep the cucumber separate for best texture. Reheat the rice and beef in the microwave until piping hot, then top with the cold cucumber, spring onion, lime and sesame seeds.
