Moqueca Baiana (Brazilian Coconut Fish Stew)
Why this recipe works
- Layered aromatics: Garlic, lime, onion, coriander stalks, tomato and palm oil build a fragrant base before the fish is added.
- Creamy sauce: Full-fat coconut milk gives the stew body while keeping the fish gently cushioned as it cooks.
- Bright finish: Lime juice cuts through the richness of the coconut milk and palm oil, keeping the stew fresh rather than heavy.

Authenticity notes
- Bahian style: Moqueca Baiana is associated with Bahia and is typically richer than some other Brazilian versions, with coconut milk and red palm oil central to its character.
- Traditional serving: Steamed rice is a natural pairing, soaking up the coconut-rich sauce without competing with the fish.
Ingredient notes
- Choose firm white fish: A firm, skinless white fish holds its shape best in the sauce and flakes cleanly once cooked.
- Palm oil matters: Red palm oil gives moqueca baiana its recognisable colour and aroma; if substituted, the stew will still work but lose some of its defining flavour.
Texture tips
- Keep the simmer gentle: Once the coconut milk is added, avoid a hard boil so the sauce stays smooth and the fish does not break apart.
- Add fish near the end: Nestling the fish into the finished sauce lets it cook gently and stay tender rather than becoming dry.
Make-ahead tips
- Prepare the vegetables ahead: The onion, pepper, tomatoes and coriander can be prepared in advance, then cooked when you are ready to make the stew.
- Reheat carefully: Warm leftovers gently over low heat until piping hot, stirring carefully so the fish remains in large pieces.

Ingredients
Instructions
- Finely grate or crush the garlic into a bowl, then stir in the juice of 1 lime, the chili flakes, 1 tsp of the fine sea salt, and the black pepper. Cut the fish into large chunks and turn them through the lime mixture. Set aside while you prepare the vegetables.
- Slice the onion and red pepper into thin strips, and cut the tomatoes into wedges. Pick the coriander leaves and finely chop the stalks, keeping them separate. Cut the remaining lime into wedges for serving.
- Warm the palm oil in a Dutch oven over medium heat. Add the onion with a pinch of the remaining salt and cook for 5 to 6 minutes until softened but not browned. Stir in the chopped coriander stalks for 30 seconds until fragrant.
- Add the red pepper and cook for 3 minutes, stirring occasionally. Tip in the tomatoes and cook for 5 minutes until they start to break down and look saucy. Pour in the coconut milk and bring to a gentle simmer.
- Nestle the fish into the simmering sauce in a single layer and spoon a little sauce over the top. Cover and cook gently for 8 to 10 minutes, until the fish is opaque and flakes easily. Taste and adjust with the remaining salt and a squeeze of lime if needed.
- Scatter over most of the coriander leaves and let the stew stand off the heat for 3 minutes so the flavours settle. Serve hot with lime wedges and the remaining coriander on top. This is traditionally served with rice.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the stew at a gentle simmer once the coconut milk is added; a hard boil can cause the sauce to split and the fish to break up.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the fish is cooked until fully opaque and piping hot throughout.
Substitutions
- Replace White fish fillet with Cod fillet for a firmer, flakier result.
- Replace Chili flakes with Smoked paprika for a milder warmth and a subtle smoky note.
Storage
- Refrigerate up to 2 days
- Cool, cover, and refrigerate within 2 hours. Reheat gently in a saucepan over low heat until piping hot, stirring carefully so the fish stays in large pieces; add a small splash of water if the sauce thickens.
