Carnival Doubles Platter (Fried Bara with Curried Chickpeas)
Why this recipe works
- Soft, saucy and fresh: Warm fried bara, thick curried chickpeas, tamarind sauce and cucumber create clear contrasts in every bite.
- Aromatic curry base: Onion, garlic, cumin, turmeric and coriander build a savoury filling without needing a long simmer.
- Built for sharing: Serving the bara, chickpeas and toppings as a platter makes the dish practical for casual gatherings.

Authenticity notes
- Trinidadian roots: Doubles are closely associated with Trinidadian street food, built around fried bara and curried channa.
- Street-food format: They are commonly served folded or filled while still warm, with chutneys and fresh toppings added to taste.
- Tamarind and cucumber: Tamarind brings acidity and sweetness, while cucumber adds the cooling freshness that balances the spiced chickpeas.
Timing notes
- Allow time for the dough: The bara dough needs to rise until doubled, so start it before making the chickpea filling.
- Most work is hands-on: The active cooking happens in stages: simmering the filling, shaping the dough and frying the bara in batches.
- Serve straight away: The bara are at their best while warm and soft, so assemble the platter soon after frying.
Texture tips
- Keep the dough soft: A slightly sticky dough gives the bara a softer texture; avoid adding too much extra flour while shaping.
- Control the frying heat: Fry at 180°C (355°F) so the bara puff quickly without absorbing too much oil.
- Thicken the chickpeas naturally: Lightly crushing some chickpeas into the sauce helps the filling become spoonable without making it dry.
Make-ahead tips
- Make the filling ahead: The chickpea filling can be refrigerated, then reheated gently with a splash of water until piping hot.
- Freeze leftover bara: Bara are best fresh, but cooled leftovers can be frozen and defrosted before reheating.
- Refresh in the oven: Warm defrosted bara in a 180°C (355°F) oven until soft and heated through.

Instructions
- For the bara dough, whisk together the plain flour, instant yeast, baking powder, ground cumin, ground turmeric and fine sea salt in a mixing bowl. Add the water and mix to a soft, slightly sticky dough, then knead for 6 to 8 minutes until smooth and elastic. Cover and leave somewhere warm until doubled in size, about 60 minutes.
- Meanwhile, make the filling: warm the sunflower oil in a saucepan over medium heat. Add the onion and cook for 8 to 10 minutes until softened and lightly golden, then add the garlic and cook for 1 minute. Stir in the ground cumin, ground turmeric and ground coriander for 30 seconds until fragrant.
- Add the chickpeas, water and fine sea salt, then bring to a gentle simmer. Cook for 15 to 20 minutes, stirring now and then, until the liquid thickens into a spoonable curry. Lightly crush a few chickpeas against the side of the pan to help it thicken, then keep warm on a low heat.
- Make a quick tamarind sauce by stirring the tamarind paste with the water and fine sea salt until smooth. Taste and adjust with a little more water if you want it looser for drizzling. Set aside.
- Slice the cucumber into thin rounds or half-moons and set aside for serving. Once the dough has risen, tip it onto a lightly oiled surface and divide into 8 equal pieces. Roll each piece into a ball, then flatten into a disc about 10 to 12 cm wide.
- Pour the sunflower oil for frying into a deep, heavy pan to a depth of about 3 to 4 cm and heat to 180°C (355°F). Fry the bara in batches for 45 to 60 seconds per side until puffed and lightly golden, turning with tongs. Drain briefly, then keep warm while you fry the rest.
- To serve, split each bara and spoon in the curried chickpeas. Arrange on a platter with the cucumber and drizzle or spoon over the tamarind sauce. Eat straight away while the bara are still soft and warm.
Recipe notes
Tips
- Keep the chickpea filling at a gentle simmer and add a splash of water if it tightens too much; it should be thick but still spoonable.
- If you have a thermometer, use it for frying; oil that is too cool makes the bara greasy, and oil that is too hot browns them before they puff.
- For best food safety, serve the filling piping hot, especially for young children, older adults, and anyone who is pregnant or immunocompromised.
Substitutions
- Replace the sunflower oil with vegetable oil for a similar neutral frying oil.
- Replace the yellow onion with white onion for a slightly sharper flavour.
- Replace the tamarind paste with a smaller amount of tamarind paste mixed with extra water for a milder, more drizzleable sauce.
Storage
- Refrigerate up to 2 days
- Store the chickpea filling in an airtight container in the fridge for up to 2 days, then reheat in a saucepan with a splash of water until piping hot. The bara are best fresh, but you can freeze them once cool; defrost, then warm in a 180°C (355°F) oven for 6 to 8 minutes.
