Punjabi Chana Masala (Chickpea Curry with Tomato and Spices)
Why this recipe works
- Layered masala: Softened onion, ginger, garlic and ground spices create a savoury base before the tomatoes are simmered down.
- Tangy but rounded: Canned tomatoes bring brightness, while chickpeas and oil give the curry body and soften the acidity.
- Keeps well: The chickpeas hold their texture after chilling or freezing, and the spices continue to settle into the sauce.

Adjust the heat
- For a milder curry: Leave out the green chilli and rely on the cumin, coriander and garam masala for warmth rather than heat.
- For more heat: Use the green chilli, or replace it with chilli flakes as suggested, adding gradually so the spice stays balanced.
- Keep the heat rounded: Add the garam masala at the end as written; prolonged simmering can make its aromatics taste flatter and harsher.
Authenticity notes
- Punjabi-style base: The character of the curry comes from cooking the onion and tomato masala until thick, glossy and deeply savoury.
- Garam masala finish: Stirring garam masala in near the end preserves its fragrant, warming flavour.
- Everyday serving: Rice and roti are natural pairings because they soak up the thick tomato masala without overwhelming the chickpeas.
Common mistakes
- Rushing the tomato masala: If the tomatoes are not cooked down before the chickpeas go in, the curry can taste sharp and watery.
- Scorching the spices: Ground spices need only a short fry; stir constantly so they bloom in the oil without catching.
- Adding too much water: Start with the recipe amount and simmer until the sauce clings to the chickpeas, adding only a splash more if needed.
Make-ahead tips
- Good the next day: The curry reheats well and the spices taste more settled after a night in the fridge.
- Freezer-friendly: Cool completely, freeze in a sealed container, then defrost overnight in the fridge before reheating.
- Reheat gently: Warm in a pot with a splash of water, stirring until the sauce loosens and the curry is piping hot throughout.

Ingredients
Instructions
- Finely chop the onion. Crush the garlic, finely grate the ginger, and finely chop the green chilli (if using).
- Heat the sunflower oil in a large pot over medium heat. Add the onion with a pinch of the salt and cook for 8 to 10 minutes, stirring, until softened and lightly golden.
- Stir in the garlic, ginger and green chilli and cook for 1 minute until fragrant. Add the ground cumin, ground coriander and ground turmeric and cook for 30 seconds, stirring constantly.
- Tip in the canned chopped tomatoes and the remaining salt. Simmer for 10 to 12 minutes, stirring occasionally, until the masala thickens and the oil begins to separate at the edges.
- Add the chickpeas and water, then bring to a gentle simmer. Cook for 12 to 15 minutes, stirring now and then, until the sauce clings to the chickpeas; mash a spoonful of chickpeas against the side of the pot to thicken if you like.
- Stir in the garam masala and cook for 1 minute. Take off the heat, stir through most of the fresh coriander, and scatter the rest on top to serve.

Tips
- For a deeper, more robust masala, let the tomatoes cook down until you see the oil separating at the edges before adding the chickpeas.
- If you prefer a thicker curry, lightly mash a few chickpeas in the pot during the final simmer to naturally thicken the sauce.
- If serving vulnerable groups, ensure the curry is simmered until piping hot throughout before serving.
Substitutions
- Replace the sunflower oil with olive oil for a fruitier base.
- Replace the green chili pepper with a pinch of chili flakes for a similar heat level.
Storage
- Refrigerate up to 4 days
- Cool completely, then refrigerate in a sealed container for up to 4 days. Freeze for up to 3 months; defrost overnight in the fridge and reheat gently in a pot with a splash of water until piping hot.
