Paneer Bhurji (Scrambled Paneer)
Why this recipe works
- Fast weeknight cooking: The masala cooks quickly in one frying pan, making the dish ready in under 30 minutes.
- Layered savoury base: Onion, ginger, garlic, chilli and softened tomato create a fragrant masala that coats the paneer well.
- Soft paneer finish: Adding the paneer at the end keeps it tender and moist rather than dry or rubbery.

Adjust the heat
- For a milder bhurji: Remove the seeds from the green chilli, or use less chilli and rely on cumin for warmth.
- For more heat: Use a hotter green chilli or add a little extra chilli to the onion-tomato masala.
- Balance before serving: A squeeze of lemon at the end helps lift the spices and keeps the heat from tasting heavy.
Texture tips
- Keep the paneer tender: Warm the paneer only briefly once it is added, folding gently so the crumbles stay soft.
- Avoid overcooking: High heat or prolonged cooking after the paneer goes in can make it firm and rubbery.
- For a softer texture: Briefly soaking the paneer in hot water before crumbling can make the finished bhurji softer.
Ingredient notes
- Use ripe tomatoes: Ripe tomatoes break down more easily into the jammy masala that carries the spices.
- Choose fresh paneer: Fresh, soft paneer gives the best texture; very firm paneer may need soaking before use.
- Add garam masala at the end: Stirring garam masala in off the heat preserves its aromatic finish.
Make-ahead tips
- Prep ahead: Chop the onion, tomato, aromatics and coriander in advance so the cooking is quick.
- Best served fresh: Paneer bhurji has the softest texture when eaten straight away after cooking.
- Reheat gently: Warm leftovers over a low heat with a splash of water, stirring carefully until piping hot.

Instructions
- Crumble the paneer into small, uneven pieces and set aside. Finely chop the onion, dice the tomatoes, and finely chop the ginger, garlic and green chilli. Cut the lemon into wedges and roughly chop the coriander.
- Heat the sunflower oil in a large frying pan over a medium heat. Add the onion with a pinch of the fine sea salt and cook for 6 to 8 minutes, stirring, until softened and lightly golden. Stir in the ginger, garlic and green chilli and cook for 1 minute until fragrant.
- Add the tomatoes, ground turmeric, ground cumin and the remaining fine sea salt. Cook for 4 to 5 minutes, stirring, until the tomatoes soften and the mixture looks jammy. If it catches, add a small splash of water and scrape up the browned bits.
- Add the crumbled paneer and gently fold to coat in the spiced tomato mixture. Cook for 2 to 3 minutes, stirring carefully, until the paneer is warmed through but still soft. Take off the heat, stir in the garam masala, squeeze over a little lemon juice, then fold through most of the coriander.
- Taste and adjust with more lemon juice and a pinch of fine sea salt if needed. Serve hot, scattered with the remaining coriander. This is best eaten straight away with roti or rice.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the heat moderate once the paneer goes in, and avoid over-stirring so it stays tender rather than turning rubbery.
- For a softer, creamier texture, briefly soak the paneer in hot water, then drain well before crumbling.
- If serving to children or anyone sensitive to heat, remove the seeds from the green chilli before chopping.
Substitutions
- Replace Sunflower oil with Ghee for a richer, more traditional flavour.
- Replace Lemon with Lime for a slightly sharper finish.
- Replace Green chili pepper with a smaller amount of Ground cumin for warmth without the fresh chilli heat.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container for up to 2 days. Reheat gently in a frying pan over a low heat with a splash of water until piping hot, stirring carefully to avoid drying out the paneer.
