Kerala Fish Curry with Coconut Milk
Why this recipe works
- Aromatic base: Shallots, ginger, garlic and curry leaves are cooked before the spices go in, giving the coconut sauce a fragrant foundation.
- Smooth coconut sauce: Coconut milk gently thickens around the tomatoes and spices, creating a rounded sauce for the fish.
- Bright finish: Lime juice added at the end lifts the richness of the coconut milk and sharpens the flavour.

Adjust the heat
- For less heat: Reduce the Kashmiri chilli and keep the lime finish; the curry will stay aromatic rather than fiery.
- For more warmth: Add a little extra Kashmiri chilli, or use a hotter chilli powder if you want a more pronounced kick.
- Keep the heat rounded: Let the chilli bloom briefly in the oil before adding tomatoes, but avoid scorching it or the sauce can taste bitter.
Ingredient notes
- Choose firm fish: Firm white fish holds its shape best in the coconut sauce and flakes cleanly once cooked.
- Use fresh curry leaves if possible: Fresh curry leaves give the curry its distinctive aroma; bruise them lightly before adding to release more fragrance.
- Kashmiri chilli adds colour: Kashmiri chilli brings a deep red hue and gentle heat, making it well suited to a coconut-based curry.
Common mistakes
- Do not overcook the fish: Add the fish only once the sauce is ready, then simmer gently until it just flakes.
- Avoid a hard boil: Boiling can break up the fish and may cause the coconut milk to split.
- Add lime off the heat: Stirring in the lime at the end keeps the flavour fresh and prevents the sauce from becoming harsh.
Make-ahead tips
- Make the sauce ahead: The coconut-tomato sauce can be prepared in advance, then brought back to a gentle simmer before adding the fish.
- Best once the fish is cooked: Cooked fish is most delicate on the day it is made, so add it close to serving when possible.
- Reheat gently: Warm leftovers over a low heat until piping hot, stirring carefully so the fish stays in large pieces.

Ingredients
Instructions
- Thinly slice the shallots. Peel and finely grate the ginger, and finely grate the garlic.
- Heat the coconut oil in a saucepan over a medium heat. Add the shallots with a pinch of the fine sea salt and cook for 6 to 8 minutes, stirring, until softened and lightly golden.
- Stir in the ginger, garlic and most of the fresh curry leaves (reserve a few leaves to finish). Cook for 1 minute until fragrant.
- Add the ground turmeric and ground Kashmiri chili and stir for 20 to 30 seconds. Add the tomatoes and cook for 5 to 6 minutes until they soften and start to break down.
- Pour in the coconut milk and water, then bring to a gentle simmer over a medium-low heat. Simmer for 5 minutes so the sauce thickens slightly and the flavours meld.
- Cut the white fish into large chunks, then slide them into the sauce in a single layer. Simmer very gently for 6 to 8 minutes, turning once, until the fish is just cooked through and flakes easily.
- Remove from the heat and season with the remaining fine sea salt to taste. Squeeze in the lime juice and scatter over the reserved curry leaves, then rest for 2 minutes before serving.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the curry at a gentle simmer once the fish goes in; a hard boil can break the fillets and split the coconut milk.
- If your curry leaves are very fresh, bruise them lightly between your fingers before adding to release more aroma.
- If serving vulnerable groups, make sure the fish is cooked until opaque throughout and flakes easily.
Substitutions
- Replace White fish fillet with cod fillet for a firm, flaky result.
- Replace Coconut oil with olive oil for a slightly less coconut-forward base.
- Replace Lime with lemon for a similar bright finish.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container for up to 2 days. Reheat gently in a saucepan over a low heat until piping hot, stirring carefully so the fish stays in large pieces; avoid boiling to prevent the coconut milk splitting.
