Aloo Gobi (Spiced Potato and Cauliflower)
Why this recipe works
- Built-in spice depth: Cooking the onion, aromatics, spices and tomato into a thick masala gives the vegetables a savoury coating rather than a watery sauce.
- Dry curry finish: Removing the lid at the end drives off excess moisture, helping the spices cling to the potatoes and cauliflower.
- Easy heat control: The optional green chilli lets you keep the dish gentle or give it a sharper fresh heat without changing the rest of the recipe.

Adjust the heat
- For a milder curry: Leave out the green chilli and rely on the garam masala for warmth rather than heat.
- For more heat: Use the green chilli and include some of the seeds if you want a sharper, fresher chilli note.
Texture tips
- Keep the cauliflower intact: Cut the cauliflower into small but sturdy florets and stir gently once it begins to soften so it holds its shape.
- Balance the cooking times: Cut the potato slightly smaller than the cauliflower so both vegetables become tender at roughly the same time.
Common mistakes
- Do not let the spices catch: After adding cumin and turmeric, stir constantly and keep the heat controlled; a splash of water can loosen the masala if it looks dry.
- Avoid a watery finish: Cook uncovered for the final few minutes so the curry stays dry and the masala coats the vegetables properly.
Make-ahead tips
- Good for meal prep: Cool completely, then refrigerate in a sealed container; it reheats well in a frying pan with a small splash of water.
- Freezer-friendly: Freeze after cooking and thaw before reheating gently, stirring until piping hot.

Ingredients
Instructions
- Prepare your vegetables: peel the potatoes and cut into 2 cm chunks; cut the cauliflower into small florets. Finely chop the onion, garlic, ginger and chilli (if using), and dice the tomato.
- Heat the oil in a large frying pan over a medium heat. Add the onion with a pinch of the salt and cook for 6 to 8 minutes, stirring, until softened and lightly golden.
- Stir in the garlic, ginger and chilli and cook for 1 minute until fragrant. Add the cumin and turmeric and cook for 30 seconds, stirring constantly so the spices do not catch.
- Add the tomato and cook for 4 to 5 minutes until it breaks down into a thick, glossy masala. If it looks dry, add a splash of water and scrape up any browned bits.
- Add the potatoes, cauliflower and remaining salt, then stir well to coat in the spiced tomato mixture. Cover and cook on a low to medium-low heat for 15 to 18 minutes, stirring every few minutes, until the potatoes are tender and the cauliflower is cooked through but still holding its shape.
- Remove the lid and cook for 2 to 3 minutes to drive off any excess moisture so the curry stays dry. Stir in the garam masala, then take off the heat and fold through most of the coriander.
- Taste and adjust with a little more salt if needed. Serve hot, scattered with the remaining coriander.
