Aloo Gobi (Potato and Cauliflower Dry Curry)

In aloo gobi, potatoes and cauliflower become the centre of a dry, deeply savoury North Indian curry rather than a sauce-heavy dish. The vegetables are coated in an onion and tomato masala scented with cumin, coriander, turmeric, garlic and ginger, then gently steamed in the pan until tender. Its character comes from the way the spiced masala clings to the cauliflower florets and potato edges, giving each bite warmth, earthiness and a little sweetness from the softened onion and tomato. Finished with fresh coriander, it works well as a simple vegan dinner, a side for dal or rice, or part of a larger Indian-style meal.

Why this recipe works

  • Masala-led flavour: Softened onion, garlic, ginger, tomato and ground spices create a concentrated base that coats the potatoes and cauliflower.
  • Efficient one-pan method: The vegetables cook directly in the masala, first absorbing flavour and then steaming until tender under the lid.
  • Straightforward technique: Low, covered cooking gives the potatoes time to soften without needing a separate boiling step.

Authenticity notes

  • Dry curry style: This is a dry sabzi-style aloo gobi rather than a saucy curry; the finished masala should cling to the vegetables.
  • Common variations: Some versions include green chilli, garam masala or dried mango powder, but this one keeps the flavour gentle and turmeric-led.

Ingredient notes

  • Choose the right potato: Yukon Gold potatoes are useful here because they become tender while still holding their shape in the pan.
  • Use ripe tomato: A ripe tomato breaks down more easily into the masala and gives better body than a firm, underripe one.
  • Cut evenly: Keep the potato chunks and cauliflower florets similar in size so they finish cooking at roughly the same time.

Texture tips

  • Steam gently: Once the vegetables are added, keep the heat low and the pan covered so the potatoes cook through without scorching the masala.
  • Finish uncovered: Removing the lid at the end lets excess moisture evaporate, giving the curry its characteristic dry, coated finish.

Make-ahead tips

  • Good for meal prep: Aloo gobi keeps well in the fridge and reheats best in a frying pan with a small splash of water.
  • Freezer suitable: Cool completely before freezing, then defrost overnight in the fridge and reheat until piping hot.
  • Add herbs late: For the freshest flavour, reserve some coriander to scatter over the curry just before serving.

  1. Peel the potatoes and cut into 2 cm chunks. Cut the cauliflower into small florets and slice the onion. Finely grate the garlic and ginger.
  2. Heat the vegetable oil in a large frying pan over a medium heat. Add the onion with a pinch of the salt and cook for 8 to 10 minutes, stirring, until soft and lightly golden. Stir in the garlic and ginger for 1 minute until fragrant.
  3. Stir in the ground cumin, ground coriander and ground turmeric and cook for 30 seconds. Add the tomatoes and the remaining salt, then cook for 5 to 7 minutes until the tomatoes break down into a thick masala. If it starts to catch, add a splash of water and scrape up the browned bits.
  4. Add the potatoes and cauliflower and stir well so everything is coated in the masala. Cover with a lid and cook on a low heat for 18 to 22 minutes, stirring every 5 minutes, until the potatoes are tender and the cauliflower is cooked through. If the pan looks dry before the vegetables are tender, add 2 to 3 tbsp water and cover again.
  5. Remove the lid and cook for 2 to 3 minutes to drive off any excess moisture so the masala clings to the vegetables. Roughly chop the fresh coriander and stir most of it through. Serve hot, scattered with the remaining coriander.

Recipe notes

Tips

  • Keep the heat low once covered so the vegetables steam gently rather than fry and catch on the base of the pan.
  • Cut the potatoes and cauliflower to a similar size so they finish cooking at the same time.
  • If you are cooking for anyone who is pregnant, elderly, or immunocompromised, wash the fresh coriander thoroughly before using.

Substitutions

  • Replace the Tomato with the same amount of Tomato, grated, for a smoother masala that coats the vegetables more evenly.
  • Replace Vegetable oil with Olive oil for a fruitier finish.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat in a frying pan over a low heat with a splash of water, stirring until piping hot. Freeze for up to 2 months; defrost overnight in the fridge before reheating.
