Shawarma-Spiced Roast Chicken Thighs

Inspired by the warm spice profile of shawarma, these roast chicken thighs turn a simple tray bake into a deeply savoury dinner. Yoghurt, lemon, garlic, cumin, coriander and paprika form a tangy marinade that clings to the skin-on thighs, helping the meat stay juicy while the skin roasts to a golden finish. The reduced tray juices become a glossy, lightly spiced coating, giving the chicken extra depth without a separate sauce. Finished with sharp red onion, parsley and lemon, it is well suited to flatbreads, rice, salads or a generous mezze-style spread.

Why this recipe works

  • Warm, layered seasoning: Cumin, coriander, paprika, garlic and lemon build a savoury shawarma-style profile without needing a long spice list.
  • Marinade that clings: Yoghurt helps coat the chicken evenly, carrying the spices onto the skin and meat as it roasts.
  • Juicy roast finish: Bone-in, skin-on thighs stay moist in the oven, while the reduced tray juices create a glossy, spiced coating.

Timing notes

  • Flexible marinating: The chicken can sit in the marinade while the oven heats, but chilling it for longer gives the spices more time to season the meat.
  • Rest before serving: A short rest after roasting helps the juices settle before the pan sauce is spooned back over the chicken.

Adjust the heat

  • Keep it mild: Use sweet paprika and keep the seasoning as written for warmth rather than pronounced heat.
  • Add more heat: Swap in hot paprika, or use a mix of sweet and hot paprika, for a sharper finish.

Ingredient notes

  • Yoghurt choice: Plain yoghurt gives a looser marinade, while Greek yoghurt makes a thicker coating that clings more firmly to the thighs.
  • Lemon balance: Lemon zest brings fragrance and the juice adds brightness; serve extra wedges at the table if you want a sharper finish.
  • Paprika matters: Sweet paprika keeps the flavour rounded and mild, while hot paprika shifts the dish towards a spicier profile.

Make-ahead tips

  • Marinate in advance: Coat the chicken and chill it for up to 24 hours, then let it come back towards room temperature before roasting.
  • Reheat gently: Reheat leftovers in a 180°C (355°F) oven until piping hot throughout to help preserve the texture of the skin and meat.
  • Freezer option: Cooked thighs can be frozen once cooled, then defrosted overnight in the fridge before reheating.

  1. Heat the oven to 220°C (430°F). In a large bowl, whisk together the yogurt, olive oil, finely grated lemon zest and 2 tbsp lemon juice.
  2. Finely grate the garlic into the bowl, then whisk in the ground cumin, sweet paprika, ground coriander, fine sea salt and black pepper. Add the chicken thighs and turn well to coat.
  3. Arrange the chicken thighs skin-side up in a roasting pan, scraping over any remaining marinade. Roast for 35 minutes, then turn the oven down to 200°C (390°F) and roast for 15 to 20 minutes more, until deeply golden and cooked through.
  4. Transfer the chicken to a plate and rest for 5 minutes. Put the roasting pan over a medium heat on the hob and simmer the tray juices for 2 to 3 minutes, stirring, until slightly thickened and glossy.
  5. Thinly slice the red onion and roughly chop the fresh parsley. Spoon the reduced juices over the chicken, then scatter with the onion and parsley and serve with extra lemon wedges from the remaining lemon.

Recipe notes

Tips

  • For the juiciest result, leave the chicken in the marinade while the oven heats, or chill for up to 24 hours and bring back towards room temperature for 20 minutes before roasting.
  • If the tray juices look split, whisk in 1 tbsp yogurt off the heat to bring the coating back together.
  • If serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked until piping hot throughout with no pink at the bone.

Substitutions

  • Replace the yogurt with Greek yogurt for a thicker marinade that clings more strongly to the chicken.
  • Replace the sweet paprika with hot paprika for a spicier finish.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze for up to 2 months; defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot.
