Air Fryer Kebab Skewers
Why this recipe works
- Cohesive texture: Mixing the lamb until tacky helps the mince bind together and grip the skewers without needing breadcrumbs or egg.
- Seasoned throughout: Onion, garlic, parsley and warm spices are worked directly into the lamb, giving every bite savoury depth.
- Fast browning: The air fryer cooks the kebabs quickly and evenly, giving good colour without a grill or barbecue.
- Bright finish: Yoghurt and lemon balance the richness of the lamb and keep the finished dish fresh.

Texture tips
- Squeeze the onion well: Grated onion adds flavour and moisture, but excess liquid can make the kebabs loose and prone to breaking.
- Mix until tacky: A firm, slightly sticky mixture will hold its shape better around the skewers and cook more evenly.
- Rest briefly before serving: A short rest after air frying lets the juices settle, giving a better texture when the kebabs are eaten.
Ingredient notes
- Choose lamb with some fat: Very lean mince can cook up dry; lamb with a little fat gives a juicier kebab and better browning.
- Use fresh herbs where possible: Fresh parsley brings a clean, green flavour that dried herbs cannot fully replicate in this short-cooked kebab.
- Adjust the paprika style: Sweet paprika keeps the flavour mild, while smoked paprika gives the kebabs a deeper, barbecue-like note.
Make-ahead tips
- Prepare the mixture ahead: The lamb mixture can be mixed and chilled before shaping, which also helps it firm up.
- Keep accompaniments separate: Store cooked kebabs separately from the yoghurt and lemon so the surface stays in better condition.
- Reheat in the air fryer: Reheat cooked kebabs at 180°C (355°F) until piping hot, turning if needed for even heating.
Serving ideas
- Serve with flatbreads or rice: Flatbreads, pilaf-style rice or a simple grain salad make the kebabs feel like a complete meal.
- Add a yoghurt sauce: Plain yoghurt works well, or loosen it slightly with lemon juice for a sharper dipping sauce.
- Finish with freshness: Extra chopped parsley, lemon wedges or sliced salad vegetables bring contrast to the rich lamb.

Instructions
- Soak the skewers in water for 10 minutes if they are wooden (skip if metal). Meanwhile, grate the onion, then squeeze out as much liquid as you can. Finely grate the garlic and finely chop the parsley.
- In a mixing bowl, combine the minced lamb with the onion, garlic, parsley, ground cumin, ground coriander, sweet paprika, fine sea salt and black pepper. Mix vigorously for 2 to 3 minutes until the mixture feels tacky and holds together. Cover and rest for 10 minutes so the mixture firms slightly.
- Divide the mixture into 6 portions and shape each one firmly around a skewer into a long, even kebab. Flatten slightly so they cook evenly and fit the air fryer basket. Chill for 5 minutes if they feel soft.
- Heat the air fryer to 200°C (390°F) for 3 minutes. Arrange the kebabs in a single layer, leaving a little space between them. Air fry for 10 to 12 minutes, turning halfway, until well browned and cooked through.
- Cut the lemon into wedges. Serve the kebabs with yogurt for dipping and lemon wedges for squeezing over. Rest the kebabs for 2 minutes before serving for the juiciest texture.
Recipe notes
Tips
- For the best texture, squeeze the grated onion very well; excess liquid makes the kebabs prone to breaking.
- If you have a probe thermometer, aim for 72°C (162°F) in the centre of the thickest kebab.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, choose pasteurised yogurt.
Substitutions
- Replace Fresh parsley with Fresh mint for a more traditional, mint-forward flavour.
- Replace Sweet paprika with Smoked paprika for a smokier finish.
Storage
- Refrigerate up to 3 days
- Cool kebabs completely, then refrigerate in a sealed container for up to 3 days. Reheat in the air fryer at 180°C (355°F) for 4 to 6 minutes until piping hot; freeze cooked kebabs for up to 2 months and reheat from thawed.
