Gołąbki Bez Zawijania (Unstuffed Cabbage Casserole)
Why this recipe works
- Classic comfort flavours: Cabbage, pork, rice and tomato sauce give the casserole the familiar savoury profile of Polish stuffed cabbage rolls.
- No rolling required: Layering the cabbage and filling removes the trickiest part of traditional gołąbki while keeping the same core ingredients.
- Balanced finish: Tomato passata brings gentle acidity, while sour cream softens the sauce and adds a mild creamy contrast.

Authenticity notes
- Inspired by classic gołąbki: Traditional gołąbki are cabbage leaves wrapped around a meat-and-rice filling; this unstuffed version keeps those flavours in a layered casserole format.
- Home-style serving: A tomato-based bake finished with sour cream fits the mild, hearty style associated with Polish everyday comfort food.
Common mistakes
- Not draining the cabbage: Blanched cabbage holds a lot of water, so drain it well before layering to keep the tomato sauce from becoming thin.
- Overcooking the rice at the start: Cook the rice only until just tender, as it continues to soften while the casserole bakes.
- Leaving the dish uncovered too early: Keeping the dish covered for most of the baking time helps the cabbage steam and soften before the top reduces slightly.
Make-ahead tips
- Assemble in advance: The casserole can be assembled ahead, covered and refrigerated, then baked until the centre is piping hot.
- Freeze cooked portions: Cool completely before freezing in portions; thaw overnight in the fridge before reheating.
- Reheat gently: Reheat covered at 180°C (355°F) so the cabbage stays moist, then uncover briefly if the sauce needs to reduce.
Ingredient notes
- Use white cabbage: White cabbage softens well in the oven and gives the casserole the familiar texture associated with gołąbki.
- Choose smooth passata: Tomato passata creates an even sauce that coats the cabbage and filling more consistently than chunkier canned tomatoes.
- Pork keeps it tender: Minced pork brings enough richness to keep the rice filling moist during the long bake.

Ingredients
Instructions
- Heat the oven to 180°C (355°F). Rinse the rice, then cook it in a saucepan of lightly salted water for 10 minutes until just tender; drain well and cool slightly.
- Meanwhile, bring a large pot of salted water to the boil. Cut the cabbage into large pieces and blanch for 6 to 8 minutes until pliable but not fully soft, then drain well.
- Heat the sunflower oil in a large frying pan over medium heat. Add the onion and cook for 6 to 8 minutes until softened, then add the garlic and cook for 1 minute until fragrant.
- In a mixing bowl, combine the minced pork, cooked rice, egg, sweet paprika, fine sea salt, black pepper, and the warm onion and garlic mixture. Mix until evenly combined.
- Spread a thin layer of tomato passata over the base of a baking dish. Add half the cabbage, then spread over the pork and rice mixture, and finish with the remaining cabbage.
- Pour the remaining tomato passata over the top, pressing the cabbage down so it is mostly covered. Cover the dish and bake for 55 minutes, then uncover and bake for 10 minutes until bubbling and the cabbage is tender.
- Let the casserole stand for 5 minutes so it slices neatly. Serve with sour cream spooned over the top.
Recipe notes
Tips
- Drain the blanched cabbage very well so the casserole does not turn watery.
- If you like a softer texture, bake covered for an extra 10 minutes before uncovering.
- For vulnerable groups, use pasteurised egg if available and ensure the casserole is piping hot throughout before serving.
Substitutions
- Replace Sour cream with Crème fraîche for a slightly richer finish.
- Replace Sweet paprika with Smoked paprika for a deeper, smokier flavour.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot, or microwave in portions; freeze for up to 2 months and thaw overnight in the fridge before reheating.
