Gołąbki z Mięsem (Polish Cabbage Rolls with Pork and Rice)

Known in Poland as gołąbki, these cabbage rolls are a homely baked dish of softened cabbage leaves wrapped around a savoury filling, most often meat and rice. In this version, minced pork is mixed with long-grain rice, onion, garlic and sweet paprika, then rolled into neat parcels and baked in a simple tomato sauce until the cabbage turns tender and the filling is fully cooked. The result is gentle, satisfying food: soft leaves, juicy pork, fluffy rice and a tangy sauce that brings everything together. Serve hot with plenty of sauce spooned over, as a complete dinner or with boiled potatoes or bread on the side.

Why this recipe works

  • Comforting and substantial: The pork and rice filling makes the rolls hearty, while the cabbage and tomato sauce keep the dish balanced rather than heavy.
  • Gentle baking: Baking the rolls covered allows the cabbage to soften fully while the filling cooks through and absorbs flavour from the sauce.
  • Good for preparing ahead: The rolls hold well with their sauce, making them suitable for refrigerating, freezing, and reheating without losing their structure.

Authenticity notes

  • Polish home-style dish: Gołąbki are widely associated with Polish home cooking, where cabbage leaves are used to wrap a meat-and-grain filling before baking or simmering in sauce.
  • Sauce variations: Tomato sauce is a common choice, though some versions are served with a lighter broth-style sauce or a creamier finish depending on family preference.

Texture tips

  • Soften the leaves properly: The cabbage leaves should be pliable enough to fold without cracking; trimming the thick ribs also helps the rolls sit neatly in the dish.
  • Keep the rice dry: Drain the cooked rice well before mixing it with the pork so the filling stays compact rather than loose or watery.

Make-ahead tips

  • Assemble in advance: The rolls can be assembled ahead and kept covered in the fridge with the sauce before baking, making them useful for planned dinners.
  • Reheat gently: Reheat covered at 180°C (355°F) until piping hot, adding a little stock if the sauce has thickened too much.
  • Freeze with sauce: Freeze cooked portions with enough tomato sauce to protect the rolls from drying out, then defrost overnight in the fridge before reheating.

Common mistakes

  • Not baking long enough: If the cabbage still feels firm, continue baking until the leaves are tender and the filling is hot all the way through.
  • Loose filling: Avoid wet rice or loosely packed rolls; a compact filling and seam-side-down placement help the parcels hold their shape.
  • Serving immediately: A short rest after baking helps the rolls settle and makes them easier to lift from the dish without breaking.

  1. Heat the oven to 180°C (355°F). Bring a large pot of well-salted water to the boil.
  2. Core the cabbage and lower it into the boiling water. Simmer for 8 to 12 minutes, turning once, until the outer leaves are pliable; lift out and let it cool until you can handle it. Peel off 10 to 12 large leaves and trim any thick ribs so they fold easily.
  3. Cook the rice in boiling salted water for 8 to 10 minutes until just tender, then drain well in a colander and cool slightly. It should be fluffy and not wet.
  4. Finely chop the onion and crush the garlic. Warm the sunflower oil in a saucepan over medium heat, then cook the onion for 6 to 8 minutes until soft but not browned; stir in the garlic for 30 seconds, then scrape into a mixing bowl to cool for a minute.
  5. Add the minced pork, cooked rice, sweet paprika, black pepper and 1 tsp of the fine sea salt to the bowl. Mix thoroughly until evenly combined.
  6. In the same saucepan, stir together the tomato passata and vegetable stock with the remaining 1 tsp fine sea salt. Bring to a gentle simmer for 5 minutes to meld the flavours.
  7. Spoon a portion of filling onto each cabbage leaf, fold in the sides, then roll up snugly. Arrange the rolls seam-side down in a baking dish so they fit closely in a single layer if possible.
  8. Pour the hot tomato sauce over the cabbage rolls, making sure they are mostly covered. Cover the dish tightly and bake for 60 minutes, then uncover and bake for 10 minutes more until the cabbage is tender and the sauce is bubbling.
  9. Rest for 5 minutes before serving. Spoon plenty of the tomato sauce over each portion.

Recipe notes

Tips

  • If the cabbage leaves tear, overlap two leaves slightly before rolling; they will hold together once baked.
  • For neater rolls, keep the filling compact and roll firmly, then place seam-side down so they do not unravel.
  • If serving vulnerable groups, make sure the pork is cooked through and the rolls are piping hot all the way to the centre.

Substitutions

  • Replace long-grain white rice with basmati rice for a slightly more fragrant filling.
  • Replace sunflower oil with olive oil for a fruitier base note.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container with the sauce. Reheat in a 180°C (355°F) oven, covered, for 20 to 25 minutes until piping hot, or gently on the hob with a splash of vegetable stock if the sauce has thickened. Freeze portions with sauce for up to 2 months and defrost overnight in the fridge before reheating.
