Gulasz Wołowy (Polish Beef Goulash)
Why this recipe works
- Deep savoury base: Slowly cooked onions, garlic, caraway and paprika create a rounded base before the beef and tomato-rich sauce are added.
- Gentle simmering: Cooking the beef low and slow allows tough stew meat to become tender while the sauce reduces and concentrates.
- Improves with time: The flavours settle and deepen after chilling, making this a strong choice for preparing a day ahead.

Ingredient notes
- Use sweet paprika: Sweet paprika gives the stew its warm colour and rounded flavour without adding significant heat.
- Bloom the paprika briefly: Stir the paprika into the hot oil for just a short time so it releases its flavour without turning bitter.
- Choose stew-friendly beef: Cuts suited to slow cooking work best here, as they soften during the long simmer and enrich the sauce.
Common mistakes
- Do not scorch the paprika: Paprika can burn quickly once added to hot oil, so stir it briefly before adding the meat and liquids.
- Avoid a hard boil: A gentle simmer keeps the beef moist and helps it become tender without toughening.
- Watch the sauce thickness: If the sauce reduces before the beef is tender, loosen it with a little more stock and continue simmering.
Serving ideas
- Serve with potatoes or dumplings: Mashed potatoes, boiled potatoes or simple dumplings are well suited to soaking up the paprika-rich sauce.
- Try buckwheat groats: Kasza-style buckwheat groats make a traditional-feeling, nutty accompaniment to the savoury beef.
Make-ahead tips
- Best the next day: Cool and chill the goulash overnight if time allows; the sauce becomes more rounded after resting.
- Reheat gently: Warm on the hob over low heat, adding a splash of stock if the sauce has thickened too much.
- Freezes well: Freeze once fully cooled, then defrost in the fridge before reheating until piping hot.

Ingredients
Instructions
- Peel and thinly slice the onion. Peel the garlic and finely chop it.
- Heat the sunflower oil in a Dutch oven over medium heat. Add the onion with a pinch of the salt and cook for 10 to 12 minutes, stirring, until soft and lightly golden.
- Stir in the garlic and caraway seeds and cook for 1 minute until fragrant. Add the sweet paprika and stir for 20 to 30 seconds so it blooms in the oil without scorching.
- Add the beef and turn the heat up to medium-high. Cook for 6 to 8 minutes, stirring and scraping the base of the pot, until the beef loses its raw colour and any released juices start to reduce.
- Pour in the tomato passata and beef stock, then add the bay leaves, remaining salt, and black pepper. Bring to a gentle simmer, then reduce the heat to low, cover, and cook for 75 to 90 minutes until the beef is very tender.
- Stir in the dried marjoram and simmer uncovered for 10 to 15 minutes until the sauce is rich and lightly thickened. Taste and adjust seasoning with a little more salt and pepper if needed, then remove the bay leaves before serving.
Recipe notes
Tips
- Keep the heat low once it reaches a simmer; a gentle bubble helps the beef turn tender without drying out.
- If the sauce thickens too much before the beef is tender, loosen with a splash of beef stock and continue simmering.
- For best flavour, cool and chill overnight, then reheat gently the next day.
Substitutions
- Replace sunflower oil with olive oil for a slightly fruitier base.
- Replace sweet paprika with smoked paprika for a deeper, smoky flavour.
- Replace dried marjoram with dried thyme for a more herbal, woodsy finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze for up to 3 months; defrost overnight in the fridge and reheat gently on the hob until piping hot, adding a splash of beef stock if needed.
