Eid Lamb Stew (Turkish Lamb with Tomatoes, Onion and Spices)
Why this recipe works
- Deep, homely flavour: Lamb shoulder, onions and tomatoes cook together slowly, creating a rich sauce with a savoury depth that suits rice or bread.
- Low simmer, tender meat: A gentle simmer gives the lamb time to soften without tightening, which is key for a stew built around shoulder meat.
- Built-in sauce depth: Tomato purée is briefly cooked with cumin and paprika before the fresh tomato is added, giving the sauce more body and warmth.

Timing notes
- Allow a short rest: Resting the stew off the heat for a few minutes helps the sauce settle and cling more evenly to the lamb.
- Mostly hands-off cooking: The active work is mainly chopping, browning and building the base; the tenderness comes from the longer covered simmer.
Ingredient notes
- Use lamb shoulder: Shoulder is well suited to stewing because it becomes tender and flavourful with slow, moist cooking.
- Ripe tomatoes matter: Ripe tomatoes give the sauce natural sweetness and body; if they are firm, finely chopping them helps them break down more evenly.
- Paprika sets the warmth: Sweet paprika keeps the stew mild, while hot paprika can be used if a warmer finish is preferred.
Make-ahead tips
- Good for making ahead: The stew keeps well in the fridge and the flavours often become more rounded after resting overnight.
- Reheat gently: Warm it slowly on the stovetop with a splash of water if the sauce has thickened, heating until piping hot throughout.
- Freezer-friendly: Cool completely before freezing, then defrost overnight in the fridge before reheating.
Serving ideas
- Serve with rice: Plain steamed rice is an ideal base for the tomato-rich sauce.
- Add bread for the juices: Crusty bread works well for scooping up the thickened sauce at the bottom of the bowl.

Ingredients
Instructions
- Heat the olive oil in a dutch oven over medium heat. Slice the onion and add it with 1 tsp of the fine sea salt, then cook for 8 to 10 minutes until softened and lightly golden.
- Cut the lamb shoulder into bite-size pieces and season with the black pepper and the remaining 1 tsp fine sea salt. Add the lamb to the pot and cook for 8 to 10 minutes, stirring occasionally, until it loses its raw colour and begins to brown in places.
- Crush the garlic and stir it in for 30 seconds until fragrant. Stir in the tomato purée, ground cumin and sweet paprika, and cook for 1 minute to toast the spices.
- Grate the tomatoes on the coarse side of a grater (or finely chop them) and add them to the pot. Pour in the water and bring to a gentle simmer, scraping the bottom to lift any browned bits.
- Cover and simmer on low for 75 to 85 minutes, stirring every so often, until the lamb is very tender. If the stew looks dry at any point, add a splash more water to keep it saucy.
- Uncover and simmer for 5 minutes to thicken slightly, then taste and adjust seasoning with a little more fine sea salt and black pepper if needed. Rest off the heat for 5 minutes before serving so the sauce settles.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the simmer very gentle; a hard boil can make lamb shoulder tighten before it turns tender.
- For a richer finish, simmer uncovered for the last 10 to 15 minutes so the sauce reduces and coats the meat.
- If serving vulnerable groups, ensure the stew is simmered until the lamb is fully cooked and piping hot throughout.
Substitutions
- Replace extra virgin olive oil with vegetable oil for a more neutral base.
- Replace sweet paprika with hot paprika if you want a spicier stew.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently on the stovetop with a splash of water until piping hot; freeze for up to 3 months and defrost overnight in the fridge before reheating.
