Involtini di Melanzane (Aubergine Rolls with Ricotta and Tomato Sauce)
Why this recipe works
- Grilled before baking: Grilling softens the aubergine first, making the slices flexible enough to roll and giving them a deeper savoury flavour.
- Soft, creamy filling: Ricotta gives the centre a gentle creaminess, while Parmesan, egg, and breadcrumbs help it set without becoming heavy.
- Simple, balanced sauce: Tomato passata, garlic, olive oil, and basil keep the sauce bright and clean, so it complements rather than overwhelms the aubergine.

Texture tips
- Grill until pliable: The aubergine should be softened enough to bend easily before rolling; undercooked slices are more likely to split.
- Keep the filling spoonable: The ricotta mixture should be thick rather than runny, so it stays inside the rolls as they bake.
- Leave a few edges exposed: Keeping some aubergine tips above the sauce lets them catch a little colour in the oven.
Ingredient notes
- Choose firm aubergines: Smooth, glossy aubergines with a firm feel slice more neatly and grill more evenly.
- Slice lengthways: Long, even slices are easier to roll and give each involtino enough surface area to hold the filling.
- Use fresh basil if possible: Fresh basil gives the tomato sauce and filling a cleaner, more aromatic finish than dried herbs.
Make-ahead tips
- Prepare components ahead: The sauce and grilled aubergine can be made in advance, then assembled with the filling before baking.
- Reheat gently: Reheat covered in a 180°C (355°F) oven until piping hot, adding a little water if the sauce has thickened.
- Freeze cooked portions: Cool completely, wrap well, and freeze in portions. Defrost overnight in the fridge before reheating.
Authenticity notes
- Italian home-style baking: This is the kind of vegetable-based baked dish often served family-style, with tomato sauce spooned generously over the rolls.
- Cheese variations: Pecorino Romano can replace Parmesan for a sharper, saltier filling.
- Serve from the baking dish: Bring it to the table hot, with extra basil and plenty of sauce for spooning over each portion.

Instructions
- Heat the oven to 200°C (400°F). Set a grill over a medium-high heat and lightly oil a baking dish.
- Make the sauce: warm 2 tbsp olive oil in a saucepan over a medium heat, then add the garlic and cook for 30 seconds until fragrant. Stir in the tomato passata, 1 tsp fine sea salt and 0.5 tsp black pepper, then simmer for 10 minutes until slightly thickened.
- Slice the aubergines lengthways into long strips about 5 mm thick. Brush both sides with the remaining 3 tbsp olive oil and season lightly with a pinch of the fine sea salt.
- Grill the aubergine slices in batches for 2 to 3 minutes per side until softened and nicely marked. Transfer to a tray and leave to cool just until comfortable to handle.
- Make the filling: in a mixing bowl, whisk the egg, then mix in the ricotta, Parmesan, breadcrumbs, most of the fresh basil, 0.5 tsp fine sea salt and 0.5 tsp black pepper. The mixture should be thick and spoonable; if it seems loose, mix a little longer until it tightens.
- Spoon a thin layer of tomato sauce into the base of the baking dish. Place a heaped tablespoon of filling at the wider end of each aubergine slice, roll up, then set seam-side down in the dish.
- Spoon the remaining tomato sauce over the rolls, leaving a few tips peeking out so they brown slightly. Bake for 20 to 25 minutes until the sauce is bubbling and the filling is just set.
- Rest for 5 minutes, then scatter over the remaining fresh basil. Serve hot with extra sauce spooned over the top.
Recipe notes
Tips
- Choose aubergines with smooth, glossy skins and a firm feel; they slice neatly and grill evenly.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, use a pasteurised egg or ensure the rolls are baked until the filling is fully set and piping hot throughout.
- For cleaner rolls, let the grilled aubergine cool for a few minutes so it is pliable but not steaming hot before filling and rolling.
Substitutions
- Replace Parmesan with Pecorino Romano cheese for a saltier, sharper filling.
- Replace fresh basil with fresh flat-leaf parsley for a more peppery, green flavour.
- Replace breadcrumbs with gluten-free bread crumbs to make the dish gluten-free.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; add a splash of water if the sauce has thickened. Freeze portions well wrapped for up to 2 months and defrost overnight in the fridge before reheating.
