Chicken Parmesan (Breaded Chicken with Tomato Sauce and Mozzarella)
Why this recipe works
- Crisp coating: The flour, egg and breadcrumb sequence gives the chicken a firm crust before it goes into the sauce.
- Bright tomato base: Passata, garlic and oregano provide enough acidity and savoury depth to balance the fried coating and melted cheese.
- Even cooking: Slicing thicker breasts into thinner cutlets helps the chicken cook through quickly before the short bake.

Ingredient notes
- Mozzarella choice: Low-moisture mozzarella gives a drier, more evenly browned topping; fresh mozzarella will be softer and may release more liquid.
- Use smooth passata: Passata creates a quick tomato sauce that clings well to the chicken without needing a long simmer.
- Herb flavour: Dried oregano keeps the sauce simple and familiar, while Italian seasoning adds a broader mixed-herb note.
Texture tips
- Let the coating settle: Resting the breaded chicken briefly before frying helps the crumbs hydrate and adhere more securely.
- Keep a steady sizzle: The oil should be hot enough to brown the crumbs quickly, but not so hot that the coating darkens before the chicken cooks.
- Do not bury the cutlets: Nestle the chicken into the sauce rather than covering it completely so some of the top coating stays crisp under the cheese.
Make-ahead tips
- Mix the sauce ahead: The passata, garlic, oregano and seasoning can be combined in the baking dish in advance and chilled until needed.
- Keep texture in mind: For the best coating, store cooked chicken and sauce separately if preparing ahead, then assemble just before baking.
- Reheat in the oven: Reheat portions on a baking tray at 190°C (375°F) until piping hot; microwaving works, but softens the crumb coating.
Serving ideas
- Serve with pasta: Spaghetti or another long pasta makes a classic pairing and catches the extra tomato sauce.
- Add something fresh: A sharp green salad or simply dressed greens help cut through the richness of the cheese and fried coating.
- Finish simply: Add a little extra parmesan or fresh herbs just before serving for a brighter final flavour.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Put the tomato passata into a baking dish, finely grate in the garlic, then stir in the dried oregano, 1 tsp of the fine sea salt and 0.5 tsp of the black pepper.
- If the chicken breasts are thick, slice each one horizontally to make thinner cutlets, then season all over with the remaining fine sea salt and black pepper. Set up three shallow bowls: plain flour in one, beaten eggs in the second, and breadcrumbs in the third.
- Coat each piece of chicken in the flour, then dip in the egg, then press into the breadcrumbs until well covered. Lay the breaded chicken on a plate while you heat the pan.
- Heat the olive oil in a frying pan over medium-high heat. Fry the chicken in batches for 2 to 3 minutes per side until deep golden, adding a little more oil if the pan looks dry.
- Nestle the fried chicken into the passata in the baking dish. Tear or slice the mozzarella over the top, then finely grate the parmesan evenly over everything.
- Bake for 15 to 18 minutes until the sauce is bubbling and the cheese is melted and browned in spots. Rest for 5 minutes before serving so the coating stays crisp and the sauce thickens slightly.
Recipe notes
Tips
- For the crispest coating, let the breaded chicken sit for 5 minutes before frying so the crumbs hydrate and adhere.
- If the pan starts to smoke, lower the heat slightly; you want steady sizzling so the chicken browns without burning.
- Eggs should be fully cooked; if serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is piping hot throughout and the centre is no longer pink.
Substitutions
- Replace Mozzarella with Low-moisture mozzarella for a drier, more browned topping.
- Replace Dried oregano with Italian seasoning for a slightly more complex herb flavour.
- Replace Olive oil with Canola oil for a higher-heat, more neutral frying oil.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat on a baking tray at 190°C (375°F) for 12 to 15 minutes until piping hot; the microwave works but softens the coating. Freeze portions well wrapped for up to 2 months and reheat from thawed as above.
