Sesame Soy Poke Bowl

A poke bowl brings together the clean freshness of raw, sashimi-grade fish with warm or room-temperature rice and crisp toppings, making it a satisfying lunch that still feels light. Here, tuna is coated in a savoury soy, sesame and fresh ginger dressing, then served over vinegar-seasoned sushi rice with cucumber, avocado and spring onion. The sesame seeds add nuttiness, while the vegetables give the bowl its freshness and soft-crunch texture. Assemble it just before serving so the tuna stays chilled and the rice does not dull its delicate texture.

Why this recipe works

  • Seasoned rice: Rice vinegar gives the warm sushi rice a gentle tang that balances the savoury soy and rich sesame oil.
  • Fresh contrast: Cool cucumber, creamy avocado and tender tuna create a bowl that feels light but satisfying.
  • Fast assembly: Once the rice has cooked and cooled slightly, the toppings need only simple slicing and dressing.

Ingredient notes

  • Choose the tuna carefully: Use sashimi-grade tuna from a trusted supplier and keep it chilled until just before cutting. For anyone avoiding raw fish, use cooked tuna instead.
  • Use firm-ripe avocado: Avocado should be ripe enough to taste creamy but firm enough to slice or cube cleanly.
  • Fold the rice gently: Mix the vinegar through the hot rice with a light folding motion so the grains stay distinct rather than becoming crushed.

Timing notes

  • Let the rice finish off the heat: The covered rest after cooking allows the grains to steam through evenly before seasoning.
  • Cool before assembling: Let the rice drop to just warm or room temperature so it does not warm the tuna when the bowl is assembled.
  • Serve immediately: Dress and serve the tuna straight away for the freshest texture and cleanest flavour.

Serving ideas

  • Add extra crunch: Try sliced radish, shredded nori or extra sesame seeds if you want more texture.
  • Serve with something light: Edamame, miso soup or a simple seaweed salad work well alongside the bowl without making the meal feel heavy.

  1. Rinse the rice under cold water until the water runs mostly clear, then drain well. Tip into a saucepan with enough cold water to cover by about 2 cm. Bring to the boil, cover, reduce to low and cook for 10 minutes, then take off the heat and rest, still covered, for 10 minutes.
  2. Spoon the hot rice into a mixing bowl and drizzle over the rice vinegar. Fold gently to cool it down and spread it out a little, then leave until just warm or room temperature. If you are in a hurry, chill for 5 minutes until it stops steaming.
  3. In a bowl, mix the soy sauce and toasted sesame oil, then finely grate in the ginger and stir. Dice the tuna into bite-sized pieces and toss with half the dressing. Keep the remaining dressing for finishing.
  4. Cut the cucumber into thin half-moons, slice the spring onion, and cut the avocado into slices or chunks. Divide the rice between two bowls. Arrange the tuna, cucumber and avocado on top, then drizzle with the remaining dressing.
  5. Finish with roasted sesame seeds and the spring onion. Serve straight away while the fish is at its freshest.

Recipe notes

Tips

  • For the best texture, let the rice cool to just warm before assembling so it does not start to cook the tuna.
  • Use sashimi-grade tuna and keep it chilled until the moment you dice it; if you are pregnant, immunocompromised, or serving young children, use cooked tuna instead.

Substitutions

  • Replace Tuna fillet with Salmon for a richer, buttery bowl.

Storage

  • Refrigerate up to 1 days
  • Best eaten straight away. If needed, refrigerate leftover rice and toppings in separate sealed containers and eat within 24 hours; do not store dressed raw tuna.
