Salmon Avocado Sushi Poke Bowl

A sushi-style poke bowl brings the clean flavours of sushi into a relaxed, spoonable lunch bowl: lightly seasoned rice, cool raw fish, creamy avocado and crisp vegetables arranged rather than rolled. Here, sashimi-grade salmon is paired with cucumber, edamame, spring onion and strips of nori for a mix of freshness, gentle sweetness and savoury depth. The rice should be warm rather than hot, so the toppings stay firm and bright, while soy sauce and roasted sesame seeds give the bowl its final salty, nutty finish. It is quick to assemble, easy to adapt, and best served immediately for the freshest texture.

Why this recipe works

  • Seasoned rice: Rice vinegar gives the sushi rice a gentle acidity that balances the richness of the salmon and avocado.
  • Fresh texture: Creamy avocado, tender salmon, crisp cucumber, edamame and nori create contrast without needing a complicated dressing.
  • Fast assembly: Once the rice and edamame are cooked, the remaining ingredients are simply sliced and arranged in bowls.

Ingredient notes

  • Choose suitable salmon: Use sashimi-grade salmon from a trusted supplier and keep it chilled until cutting. For vulnerable diners, cooked salmon is the safer option.
  • Use firm avocado: The avocado should be ripe enough to taste creamy but firm enough to hold its shape when cut into chunks.
  • Add nori at the end: Cut the nori into thin strips just before serving so it keeps its savoury flavour and delicate texture.

Timing notes

  • Cool the rice slightly: Let the seasoned rice come down to warm room temperature before adding the toppings, so the salmon stays cool and the avocado does not soften.
  • Best freshly assembled: The bowl is at its best soon after assembling, while the salmon is cold, the cucumber is crisp and the nori has not softened.

Make-ahead tips

  • Keep components separate: Cooked rice, cucumber, edamame and spring onion can be stored separately, then combined with the salmon and avocado just before eating.
  • Prep the vegetables early: Cook the edamame and slice the cucumber and spring onion ahead of time, keeping them chilled until you are ready to assemble.

  1. Rinse the rice in cold water until the water runs mostly clear. Tip into a saucepan with the water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Remove from the heat and leave, covered, for 10 minutes.
  2. Tip the rice into a mixing bowl and drizzle over the rice vinegar. Fold gently to coat, then spread the rice out a little so it cools to warm room temperature.
  3. Bring a small saucepan of water to the boil and cook the edamame for 2 minutes, or until tender. Drain well and set aside to cool slightly.
  4. Cut the salmon into bite-sized cubes. Halve and stone the avocado, then cut into chunks; halve the cucumber lengthways and slice. Thinly slice the spring onion and cut or snip the nori into thin strips.
  5. Divide the rice between two bowls and arrange the salmon, avocado, cucumber and edamame on top. Sprinkle over the spring onion, nori and roasted sesame seeds, then drizzle with the soy sauce to serve.

Recipe notes

Tips

  • For best results, use sashimi-grade salmon and keep it cold until the moment you cube it; if serving to vulnerable groups, use cooked salmon instead.
  • If the rice is still hot, spread it out in a thin layer in the bowl for a couple of minutes so the toppings do not soften.

Substitutions

  • Replace soy sauce with light soy sauce for a slightly lighter, saltier finish.
  • Replace rice vinegar with champagne vinegar for a softer acidity.

Storage

  • Refrigerate up to 1 days
  • For best quality, assemble just before eating. If needed, store cooked rice and vegetables separately for up to 2 days, but keep the salmon and avocado for same-day use and add them at the last minute.
