Chipotle Chicken Salad Bowl
Why this recipe works
- Cool, tangy balance: Lime yoghurt softens the chipotle heat and adds brightness without making the bowl feel heavy.
- Fresh texture contrast: Crisp romaine, creamy avocado, juicy tomatoes and warm sliced chicken make each bowl feel varied and satisfying.
- Fast, practical cooking: The chicken cooks quickly in a frying pan while the salad components and dressing are prepared alongside.

Adjust the heat
- For a milder bowl: Use a lighter hand with the chipotle sauce and rely on the smoked paprika for warmth without as much chilli heat.
- For more heat: Add extra chipotle sauce to the chicken marinade and let it caramelise slightly in the pan for a deeper, smokier finish.
- Keep the heat balanced: Taste the yoghurt dressing before serving; extra lime can sharpen the bowl and keep the smoky spice from feeling too heavy.
Make-ahead tips
- Store components separately: Keep the chicken, dressing, lettuce and toppings in separate containers so the salad stays crisp.
- Reheat the chicken only: Warm the chicken in a frying pan over medium heat until piping hot, then assemble it with the cold salad ingredients.
- Prep most toppings ahead: The beans, corn, tomatoes and dressing can be prepared in advance; slice the avocado just before serving for the best texture and colour.
Texture tips
- Dry the lettuce well: Romaine should be thoroughly dried after washing so the dressing clings lightly instead of pooling at the bottom of the bowl.
- Rest before slicing: Let the cooked chicken sit briefly before cutting so the juices settle and the slices stay tender.

Ingredients
Instructions
- Bring the water to the boil in a saucepan and season with a pinch of the fine sea salt. Add the fresh corn on the cob and cook for 6 to 8 minutes until tender. Lift out, cool briefly, then cut the kernels off the cob.
- Pat the chicken thighs dry, then toss with the chipotle sauce, ground cumin, smoked paprika, olive oil, the remaining fine sea salt, and black pepper. Finely grate or crush the garlic and mix it in. Set aside while you prep the salad.
- Whisk the greek yogurt with the juice of half the lime and a pinch of black pepper. Taste and add more lime juice if you want it sharper. Keep the dressing cool while you cook the chicken.
- Wash and dry the romaine lettuce, then tear into bite-sized pieces and divide between two bowls. Drain and rinse the canned black beans, then halve the cherry tomatoes. Halve the avocado, remove the stone, and slice the flesh.
- Heat a large frying pan over medium-high heat, then add the chicken in a single layer. Cook for 5 to 7 minutes, turning once, until browned and cooked through. Rest for 2 minutes, then slice.
- Top the lettuce with the black beans, sweetcorn, cherry tomatoes, and avocado. Add the warm sliced chicken and spoon over the lime yoghurt dressing. Serve straight away while the chicken is warm and the salad stays crisp.
Recipe notes
Tips
- For the crispest bowl, dry the romaine lettuce thoroughly before assembling so the dressing clings rather than pooling.
- If you like more heat, add an extra 1 tbsp chipotle sauce to the chicken and cook it off well in the pan so it caramelises slightly.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets for a leaner bowl; reduce the cooking time slightly and cook just until the centre is no longer pink.
- Replace Greek yogurt with Whole milk yogurt for a looser, milder dressing.
Storage
- Refrigerate up to 2 days
- Store the chicken, salad components, and dressing separately in the fridge. Reheat the chicken in a frying pan over medium heat until piping hot, then assemble with the cold salad and dressing just before serving; cut the avocado fresh if possible.
