Tofu Sesame Poke Bowl

A poke bowl takes the easy structure of seasoned rice, bite-sized toppings and a savoury dressing, served together in a bowl that is fresh, filling and highly customisable. This vegan version uses firm tofu marinated with soy sauce, sesame oil, ginger, garlic and maple syrup, giving it a glossy, umami-rich coating without needing to cook it. Sushi rice provides the soft, lightly tangy base, while cucumber, edamame and spring onion bring crispness, sweetness and green freshness. Finished with roasted sesame seeds, it works well as a quick lunch or light dinner, especially when the rice is cooled slightly before assembling so the vegetables stay bright and crunchy.

Why this recipe works

  • Savoury sesame depth: Soy sauce, sesame oil, garlic and ginger give the tofu a bold, rounded flavour without needing any cooking.
  • Balanced textures: Sticky sushi rice, firm tofu, crisp cucumber and tender edamame keep each bowl fresh and satisfying.
  • Easy to prep ahead: The rice, tofu and vegetables can be stored separately, then assembled just before serving for the best texture.

Timing notes

  • Let the rice rest: Keeping the rice covered off the heat helps it finish steaming and gives it the sticky texture expected in a bowl like this.
  • Serve warm or cold: The bowl works either way, but the rice should be warm rather than hot if you want the cucumber to stay crisp.

Ingredient notes

  • Choose firm tofu: Firm tofu holds the marinade well while keeping enough structure to cube neatly for serving.
  • Taste your sesame oil: Toasted sesame oils vary in strength, so add it to taste if yours is especially intense.

Make-ahead tips

  • Keep fresh toppings separate: Store the rice and tofu apart from the cucumber and spring onion so the vegetables stay crisp.
  • Reheat only the rice: If serving warm, reheat the rice until piping hot, then add the chilled tofu and vegetables just before eating.

  1. Rinse the sushi rice in a sieve under cold water until the water runs mostly clear. Tip into a saucepan, cover with fresh water and bring to the boil, then cover and cook on the lowest heat for 12 minutes. Remove from the heat and leave, still covered, for 10 minutes.
  2. Fold the rice vinegar through the warm rice, then cover and set aside to cool slightly. Meanwhile, finely grate the garlic and ginger into a bowl and stir in the soy sauce, maple syrup and 1 tbsp of the sesame oil.
  3. Cut the tofu into bite-sized cubes and toss through the sesame marinade. Leave to marinate for 10 minutes while you prep the rest of the bowl, stirring once or twice so it coats evenly.
  4. Cook the edamame in boiling water for 2 to 3 minutes until tender, then drain well and cool. Halve the cucumber lengthways and slice, and finely slice the spring onion.
  5. Divide the rice between two bowls and top with the cucumber, edamame and marinated tofu. Drizzle over the remaining 1 tbsp sesame oil, then finish with the spring onion and roasted sesame seeds.

Recipe notes

Tips

  • For a cleaner flavour, let the rice cool to warm rather than hot before adding the toppings so the cucumber stays crisp.
  • If your sesame oil is strongly toasted, start with three-quarters of the amount and add the rest to taste at the end.

Substitutions

  • Replace maple syrup with the same amount of mirin-style sweetness by increasing the rice vinegar slightly and adding a little more sesame oil for roundness.
  • Replace firm tofu with extra-firm tofu for neater cubes and a firmer bite.

Storage

  • Refrigerate up to 2 days
  • Store the rice and tofu separately from the cucumber and spring onion, then assemble just before eating. Eat cold, or reheat only the rice in the microwave until piping hot and top with the chilled components.
