Tofu Teriyaki Poke Bowl
Why this recipe works
- Layered savoury flavour: Soy sauce, mirin, garlic, ginger and teriyaki sauce give the tofu a glossy, umami-rich coating.
- Warm and crisp contrast: Golden tofu and tender rice sit alongside cool cucumber, edamame, sesame seeds and nori for a balanced bowl.
- Efficient cooking: The toppings can be prepared while the rice rests, keeping the total cooking time comfortably under an hour.

Ingredient notes
- Use extra-firm tofu: Extra-firm tofu holds its shape in the pan and gives cleaner, more defined cubes for the bowl.
- Dry the tofu well: Patting the tofu dry before cooking helps it brown more easily and allows the teriyaki glaze to cling.
- Add nori at the end: Nori brings the seaweed note associated with poke-style bowls, but it is best added just before serving so it stays pleasant in texture.
Common mistakes
- Do not crowd the tofu: Cook the cubes in a single layer so they brown at the edges rather than steaming.
- Keep the glaze gentle: Once the teriyaki mixture is added, use a gentle simmer; boiling it hard can make the sauce reduce too quickly and taste overly salty.
Make-ahead tips
- Separate warm and fresh components: Store the rice and tofu away from the cucumber, spring onion and nori to keep the toppings crisp.
- Reheat before assembling: Warm the rice and tofu until piping hot, then add the cold vegetables, sesame seeds and nori just before eating.
Authenticity notes
- A plant-based adaptation: Teriyaki tofu makes this a vegan, fusion-style take on a poke bowl rather than a traditional raw-fish version.

Ingredients
Instructions
- Rinse the sushi rice in a sieve under cold water until the water runs mostly clear. Tip into a saucepan, cover with fresh water and bring to the boil, then cover and cook on the lowest heat for 12 minutes. Remove from the heat and leave, still covered, for 10 minutes.
- Stir the rice vinegar, soy sauce and mirin together in a bowl. Fold this through the warm rice, then cover and leave to cool slightly while you prepare the toppings.
- Finely grate the garlic and ginger, then stir into the teriyaki sauce. Cut the tofu into bite-sized cubes.
- Heat a large frying pan over a medium heat and add the tofu in a single layer. Cook for 6 to 8 minutes, turning, until lightly golden at the edges. Pour in the teriyaki mixture and simmer for 2 to 3 minutes, tossing, until the tofu is glossy and the sauce lightly thickens.
- Cook the edamame in boiling water for 2 to 3 minutes until tender, then drain well. Halve the cucumber lengthways and slice, and finely slice the spring onion.
- Divide the rice between two bowls. Top with the cucumber, edamame and teriyaki tofu, then sprinkle over the spring onion and roasted sesame seeds. Cut or tear the nori into strips and serve alongside or scattered over the bowls.
Recipe notes
Tips
- For the best texture, pat the tofu dry with kitchen paper before cutting so it browns more easily and the glaze clings well.
- Keep the teriyaki sauce at a gentle simmer once added; a hard boil can make it reduce too quickly and taste overly salty.
Substitutions
- Replace mirin with the same amount of rice vinegar for a sharper, less sweet finish.
- Replace teriyaki sauce with a mix of soy sauce and rice vinegar (use the listed soy sauce and rice vinegar, plus an extra splash of mirin) for a lighter, less sticky glaze.
Storage
- Refrigerate up to 2 days
- Store rice and tofu separately from the cucumber and spring onion for the best texture. Reheat the rice and tofu in the microwave until piping hot, then add the cold toppings and nori just before serving.
