Salmon Mango Poke Bowl
Why this recipe works
- Fast assembly: Once the rice is cooked, the bowl comes together with simple chopping, a quick dressing and no extra cooking for the toppings.
- Contrasting textures: Warm sticky rice, cool salmon, crisp cucumber, creamy avocado and juicy mango make the bowl feel balanced and satisfying.
- Bright, savoury dressing: Lime juice lifts the richness of the salmon and avocado, while soy sauce and toasted sesame oil add saltiness, umami and nuttiness.
- Easy to adapt: The same soy-sesame-lime dressing works well with tuna or cooked salmon, making the bowl flexible without changing the structure of the dish.

Ingredient notes
- Choose sashimi-grade salmon: Use salmon sold specifically for raw eating and keep it chilled until just before preparing the bowl.
- Use firm-ripe mango: The mango should be sweet but still firm enough to dice cleanly, so it holds its shape alongside the salmon.
- Use toasted sesame oil: Toasted sesame oil brings a deeper nutty flavour than untoasted sesame oil, so only a small amount is needed for impact.
Timing notes
- Let the rice stand: Keeping the rice covered off the heat after cooking helps it finish steaming and gives it a better sushi-rice texture.
- Serve straight away: Assemble the bowls just before eating so the rice stays warm, the toppings stay cool and the avocado remains fresh.
Make-ahead tips
- Keep components separate: If preparing ahead, store the rice, dressed salmon and fresh toppings in separate airtight containers, then assemble when ready to eat.
- Add avocado last: Slice the avocado just before serving to avoid browning and keep the bowl looking fresh.
- Best eaten fresh: Because the bowl uses raw fish, it is at its best on the day it is made and should not be left at room temperature.
Ingredient swaps
- Try tuna instead: Sashimi-grade tuna works with the same dressing and gives the bowl a firmer, meatier texture.
- Use cooked salmon: Cooked, cooled salmon is a safer alternative for anyone avoiding raw fish and still pairs well with the mango and sesame dressing.
- Adjust the soy sauce: Light soy sauce can be used for a sharper, saltier finish; taste the dressing before tossing it with the salmon.

Ingredients
Instructions
- Rinse the sushi rice in cold water until the water runs mostly clear. Tip into a saucepan with 225 ml water, bring to the boil, cover, then cook on the lowest heat for 10 minutes. Remove from the heat and leave, still covered, for 10 minutes.
- Meanwhile, dice the salmon into bite-size pieces and put into a mixing bowl. Whisk together the soy sauce, sesame oil and the juice of the lime, then toss with the salmon. Thinly slice the spring onion and stir most through the salmon, reserving a little for serving.
- Peel and dice the mango, slice the cucumber, and slice the avocado. Divide the warm rice between two bowls and top with the dressed salmon, mango, cucumber and avocado. Sprinkle with roasted sesame seeds and the reserved spring onion, then serve straight away.

Tips
- For the best texture, keep the rice warm and the toppings cool, then assemble just before eating.
- Use sashimi-grade salmon and keep it chilled; if serving to pregnant people, young children, older adults, or anyone immunocompromised, use cooked salmon instead.
Substitutions
- Replace Salmon fillet with Tuna steak for a tuna poke bowl with the same dressing.
- Replace Soy sauce with Light soy sauce for a slightly lighter, saltier flavour.
Storage
- Refrigerate up to 1 days
- Best assembled and eaten straight away. If needed, keep the cooked rice and prepared toppings (including dressed salmon) in separate airtight containers in the fridge and eat within 24 hours; do not leave raw fish at room temperature.
