Tuna Ponzu Poke Bowl

A poke bowl brings together seasoned rice, raw fish and crisp toppings in a format that is fresh, filling and easy to customise. Here, sashimi-grade tuna is cut into neat cubes and dressed with ponzu, giving the bowl a clean citrus-soy sharpness rather than a heavy sauce. Cool cucumber, firm avocado and spring onion add freshness, creaminess and bite, while sesame seeds bring a nutty finish. It is best assembled just before serving so the rice stays softly warm, the tuna remains chilled and the vegetables keep their clean texture.

Why this recipe works

  • Bright, balanced dressing: Ponzu brings citrus, salt and savoury depth, seasoning the tuna without needing a heavy sauce.
  • Clean texture contrast: Soft rice and creamy avocado are balanced by chilled tuna, crisp cucumber and a nutty sesame finish.
  • Fast bowl-style assembly: Once the rice is cooked, the remaining ingredients need only slicing, dressing and arranging.

Ingredient notes

  • Choose tuna carefully: Use tuna sold as suitable for raw eating and buy it from a trusted fishmonger or supplier.
  • Use firm-ripe avocado: The avocado should yield slightly but still slice cleanly, so it stays intact in the bowl.
  • Seed the cucumber: Scraping out the watery centre keeps the bowl fresher and prevents the rice from becoming damp.

Timing notes

  • Serve straight away: Assemble the bowls just before eating so the tuna stays cool and the vegetables keep their texture.
  • Keep the tuna chilled: After tossing with ponzu, return the tuna to the fridge while the vegetables are prepared.

Make-ahead tips

  • Store components separately: If preparing ahead, keep the rice, vegetables and tuna in separate airtight containers and assemble close to serving.
  • Prep the vegetables wisely: Cucumber and spring onion can be sliced in advance, but cut the avocado shortly before serving to limit browning.

Common mistakes

  • Storing dressed raw tuna: Avoid keeping ponzu-dressed raw tuna for long periods; if storage is unavoidable, refrigerate components separately and eat within 24 hours.
  • Adding toppings to very hot rice: Let the rice cool slightly in the bowl before adding the tuna and avocado, so the toppings stay fresh and clean-tasting.

  1. Rinse the sushi rice in cold water until the water runs mostly clear. Tip into a saucepan with the water, bring to the boil, then cover and cook over a very low heat for 10 minutes. Take off the heat and leave, covered, for 5 minutes.
  2. Meanwhile, cut the tuna into 1.5 cm cubes and put into a mixing bowl. Add the ponzu sauce and gently toss to coat. Chill while you prepare the vegetables.
  3. Halve the cucumber lengthways, scrape out the watery seeds, then slice. Halve, stone and peel the avocado, then slice. Thinly slice the spring onion.
  4. Divide the rice between two bowls and spread it out a little so it cools slightly. Spoon the ponzu tuna over the rice, then add the cucumber and avocado. Finish with spring onion and sesame seeds, and serve straight away.

Recipe notes

Tips

  • For the cleanest texture, keep the tuna and ponzu mixture chilled and only dress the fish just before serving if your kitchen is warm.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use tuna that has been properly frozen for raw consumption, or cook the tuna briefly and cool before assembling.

Substitutions

  • Replace Tuna steak with Salmon for a richer, more buttery poke bowl.
  • Replace Sesame seeds with Roasted sesame seeds for a deeper, toastier finish.

Storage

  • Refrigerate up to 1 days
  • Best eaten straight away. If you must store it, keep the rice and toppings in separate airtight containers in the fridge and eat within 24 hours; do not store dressed raw tuna for longer.
