Egg Curry with Steamed Rice

Across Indian cooking, egg curry is a practical, protein-rich dish that turns hard-boiled eggs into a full meal with the help of a spiced tomato and onion gravy. Here, ginger, garlic, green chilli and ground spices give the masala warmth and depth, while grated ripe tomatoes cook down until thick enough to cling to the eggs. Garam masala and fresh coriander finish the sauce with aromatic lift rather than heaviness. Served with steamed basmati rice, it is satisfying without being elaborate: comforting, gently spicy and well suited to a weeknight lunch or dinner.

Why this recipe works

  • Layered masala: Softened onion, ginger, garlic, chilli and ground spices build a savoury base before the eggs go in.
  • Balanced tomato gravy: Cooking the grated tomatoes until thickened softens their acidity and gives the sauce enough body to coat the eggs.
  • Complete with rice: Steamed basmati rice absorbs the spiced gravy, turning the curry into a simple, filling main meal.

Adjust the heat

  • For less heat: Use less green chilli or remove the seeds before chopping.
  • For more heat: Add extra green chilli with the ginger and garlic so the heat cooks into the masala.
  • Keep the spice rounded: Finish with garam masala off the boil or at a very gentle simmer to preserve its warm, aromatic character.

Texture tips

  • Keep the eggs tender: Once the eggs are added, simmer gently rather than boiling hard; this helps prevent the whites from toughening.
  • For a richer gravy: Let the tomato masala reduce until it thickens and the oil begins to show at the edges before adding water.

Make-ahead tips

  • Store curry and rice separately: Cool both quickly, then refrigerate in separate airtight containers so the rice keeps its texture and the curry reheats evenly.
  • Reheat gently: Warm the curry with a splash of water until piping hot, and reheat the rice covered until steaming throughout.

Ingredient notes

  • Use ripe tomatoes: Ripe tomatoes break down more easily and give the gravy better sweetness and body.
  • Score the eggs if you like: Lightly scoring the peeled eggs helps the masala cling to the surface and season them more effectively.

  1. Put the eggs in a large pot and cover with cold water. Bring to the boil, then simmer for 10 minutes. Drain, cool under cold running water, then peel and set aside.
  2. Rinse the basmati rice in a bowl of cold water until the water runs mostly clear, then drain. Tip into a saucepan with 350 ml water and 0.5 tsp of the fine sea salt. Bring to the boil, cover, reduce to low and cook for 10 minutes, then rest off the heat for 5 minutes.
  3. Meanwhile, finely chop the yellow onion. Grate the ginger root and crush the garlic. Finely chop the green chili pepper and roughly chop the fresh coriander, keeping a small handful back for serving.
  4. Heat the sunflower oil in a saucepan over medium heat. Add the onion with a pinch of the remaining salt and cook for 8 to 10 minutes, stirring, until soft and lightly golden. Stir in the ginger, garlic and green chilli and cook for 1 minute until fragrant.
  5. Grate the tomatoes into the pan (discarding the skins) and cook for 6 to 8 minutes until thickened and the oil begins to separate at the edges. Stir in the ground turmeric, ground cumin and ground coriander and cook for 30 seconds. Add 250 ml water and simmer for 5 minutes to make a rich gravy.
  6. Add the peeled eggs to the gravy and simmer gently for 4 to 5 minutes, turning them so they are well coated. Stir in the garam masala and most of the chopped fresh coriander, then taste and adjust with the remaining salt if needed. Fluff the rice with a fork and serve the egg curry alongside, finished with the reserved coriander.

Recipe notes

Tips

  • For deeper flavour, lightly score the peeled eggs with a knife before adding them to the gravy so the masala clings and seasons them.
  • Keep the curry at a gentle simmer once the eggs go in, so the gravy stays smooth and the eggs do not toughen.
  • If serving anyone who is pregnant, elderly, or immunocompromised, use eggs stamped with the British Lion mark and ensure they are hard-boiled and piping hot when served.

Substitutions

  • Replace the green chili pepper with an extra 0.5 tsp garam masala for warmth without fresh chilli heat.
  • Replace sunflower oil with olive oil for a slightly fruitier finish.

Storage

  • Refrigerate up to 3 days
  • Cool the curry and rice quickly, then refrigerate in separate airtight containers. Reheat the curry in a saucepan with a splash of water until piping hot; reheat the rice in the microwave, covered, until steaming hot throughout.
