Pasta con Vongole in Bianco (Spaghetti with Clams in White Wine)
Why this recipe works
- Natural clam flavour: The clams steam directly in wine, garlic and olive oil, so their juices become the foundation of the sauce.
- Glossy sauce without cream: Reserved pasta water helps the olive oil and clam juices emulsify into a light coating for the spaghetti.
- Fresh finish: Parsley, lemon zest and a final squeeze of lemon lift the briny sauce without overwhelming the clams.

Ingredient notes
- Choose live clams carefully: Use live clams with closed shells, discarding any that are cracked or stay open when tapped.
- Use a dry white wine: A dry white wine keeps the sauce savoury and clean rather than sweet.
- Add lemon at the end: Lemon is best added off the heat so it brightens the pasta without making the sauce taste harsh.
Timing notes
- Prepare before the clams go in: Slice the garlic, chop the parsley and zest the lemon before cooking, as the final steps move quickly.
- Serve straight away: Clam pasta is at its best immediately, while the sauce is glossy and the clams are still plump.
Common mistakes
- Do not colour the garlic: Cook the garlic only until fragrant; browned garlic can make the delicate sauce taste bitter.
- Remove clams as they open: Lifting opened clams out of the pan helps keep them tender while the rest finish steaming.
- Add pasta water gradually: Too much liquid can thin the sauce, so add pasta water a little at a time and toss until glossy.
Authenticity notes
- In bianco style: “In bianco” means the pasta is made without tomato, letting the clams, garlic, wine and olive oil define the sauce.
- Chilli is optional: A little chilli is common in many versions, but the heat should support the seafood rather than dominate it.

Instructions
- Bring a large pot of water to the boil and season it with 1.5 tsp of the fine sea salt. Add the spaghetti and cook until just shy of al dente. Before draining, scoop out 250 ml of the pasta water.
- Meanwhile, rinse the clams well, discarding any with cracked shells or any that stay open when tapped. Finely slice the garlic, chop the fresh parsley, and zest then juice the lemon. Keep everything close to the hob so you can finish quickly.
- Warm the extra virgin olive oil in a large frying pan over medium heat. Add the garlic and chili flakes and cook for 30 to 60 seconds until the garlic is fragrant but not coloured. Pour in the dry white wine and let it bubble for 1 minute.
- Tip in the clams, cover, and steam over medium-high heat for 4 to 6 minutes, shaking the pan once or twice, until most have opened. Transfer the opened clams to a bowl as they open, and discard any that remain closed at the end. Keep the pan juices in the pan.
- Add the drained spaghetti to the pan with a splash of the reserved pasta water and toss over medium heat until the sauce looks glossy and lightly coats the pasta. Add more pasta water a little at a time as needed to emulsify. Taste and adjust with the remaining fine sea salt if needed.
- Return the clams (and any collected juices) to the pan and toss briefly to warm through. Take off the heat and add the parsley, lemon zest, and a squeeze of lemon juice to taste. Serve immediately while the clams are hot and briny.
Recipe notes
Tips
- Do not overcook the clams: as soon as they open, lift them out so they stay plump and tender.
- If the sauce tastes a little sharp, add a small splash more pasta water and toss again to round it out and keep it glossy.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the clams are thoroughly cooked and discard any that do not open.
Substitutions
- Replace dry white wine with water for a non-alcoholic version; add an extra squeeze of lemon at the end to brighten the sauce.
- Replace chili flakes with a smaller amount if you prefer a gentler heat.
- Replace spaghetti with another long pasta shape if that is what you have, keeping the cooking time according to the packet.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If you have leftovers, cool quickly and refrigerate; reheat gently in a frying pan with a splash of water until piping hot, and discard any clams that smell off.
