Stifado (Greek Slow-Cooked Beef and Onion Stew)
Why this recipe works
- Deep savoury base: Browning the beef first creates the foundation for a richer sauce once the wine, vinegar and passata are added.
- Balanced sauce: Red wine and vinegar cut through the richness of the beef while tomato passata gives the stew body and sweetness.
- Improves with resting: Like many slow-cooked stews, the flavours settle well after cooking, making it a practical dish to prepare ahead.

Ingredient notes
- Use pearl onions where possible: Pearl onions are central to stifado’s texture and identity, becoming sweet and soft while still holding their shape.
- Keep the warm spices gentle: Cinnamon and cloves should sit in the background, adding warmth rather than making the stew taste sweet.
- Balance the vinegar: If the sauce tastes sharp near the end, let it simmer a little longer so the acidity rounds out.
Common mistakes
- Do not crowd the beef: Brown the meat in batches so it sears properly rather than steaming in the pot.
- Avoid a hard boil: Keep the stew at a gentle simmer; vigorous boiling can tighten the beef and break down the onions too quickly.
- Reduce only at the end: If the sauce is thin, uncover the pot once the beef is tender and simmer briefly to concentrate it.
Make-ahead tips
- Good for cooking ahead: Cook the stew fully, cool it completely, then refrigerate it in a sealed container for an easy next-day meal.
- Reheat gently: Warm it slowly on the hob, adding a little water if the sauce has thickened too much.
- Freezes well: Freeze the cooled stew in a sealed container, then defrost overnight in the fridge before reheating until piping hot.

Ingredients
Instructions
- Heat the olive oil in a heavy casserole over medium-high heat. Season the beef with the salt and pepper, then brown it well in batches so it takes on deep colour. Transfer the browned beef to a bowl.
- Add the pearl onions to the pot and cook for 6 to 8 minutes, stirring, until lightly golden in places. Add the garlic and cook for 1 minute until fragrant. Pour in the red wine and vinegar, scraping up any browned bits from the base.
- Return the beef (and any juices) to the pot, then stir in the passata, bay leaves, cinnamon and cloves. Bring to a gentle simmer, then reduce the heat to low, cover and cook for 2 hours, stirring occasionally, until the beef is meltingly tender and the onions are soft. If the sauce looks thin, simmer uncovered for 10 to 15 minutes to thicken.
- Taste and adjust the salt and pepper if needed, then remove the bay leaves and cloves before serving. Rest the stew for 5 minutes so the sauce settles. Serve hot, ideally with potatoes, rice or bread.
Recipe notes
Serving suggestions
This recipe pairs well with:
Tips
- Take your time browning the beef: good colour at the start is what gives the stew its deep, rich flavour.
- Keep the simmer very gentle; if it boils hard, the beef can tighten and the onions may break down too quickly.
- If serving vulnerable groups, ensure the stew is simmered steadily until the beef is fully tender and piping hot throughout.
Substitutions
- Replace red wine with dry white wine for a lighter, slightly sharper sauce.
- Replace red wine vinegar with white wine vinegar for a milder acidity.
- Replace ground cinnamon with a cinnamon stick for a softer, rounder spice note (remove before serving).
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently on the hob over low heat, adding a splash of water if needed, until piping hot. Freeze for up to 3 months; defrost overnight in the fridge before reheating.
