Vegan Ratatouille

Provençal ratatouille brings together aubergine, courgette, peppers and ripe tomatoes in a gently cooked vegetable stew that is prized for its clean, summery flavour and soft but distinct textures. Rather than collapsing into a sauce, the vegetables are cut evenly and simmered slowly so each one keeps its character, with onion, garlic and olive oil giving depth and fresh basil lifting the finish. Naturally vegan and flexible, it works as a light dinner, a side for grains or bread, or a make-ahead dish served warm or at room temperature.

Why this recipe works

  • Flavour builds in stages: Softening the onion, garlic and peppers before adding the remaining vegetables gives the stew a savoury base rather than a flat tomato flavour.
  • Gentle simmering: Low, covered cooking allows the vegetables to soften and release their juices without collapsing into a purée.
  • Flexible serving: Ratatouille works warm, at room temperature, as a main with bread or grains, or as a side for a larger meal.

Timing notes

  • Let the flavours settle: A short rest after cooking helps the olive oil, tomato juices and herbs come together more fully.
  • Serve warm or room temperature: Ratatouille does not need to be piping hot; its flavour is often clearer when it has cooled slightly.

Ingredient notes

  • Use ripe tomatoes: Ripe tomatoes bring the sweetness and acidity that form the sauce; keep their juices when chopping.
  • Fresh herbs suit the finish: Fresh basil adds brightness at the end, while fresh thyme gives a more earthy Provençal character.

Common mistakes

  • Avoid cooking it to a mash: Stop once the vegetables are tender but still distinct, especially the courgette and aubergine.
  • Keep the simmer gentle: High heat can make the vegetables break down unevenly or catch on the bottom before they release enough liquid.

Make-ahead tips

  • Good made ahead: The stew keeps well in the fridge and often tastes more rounded the next day.
  • Reheat gently: Warm slowly in a saucepan over low heat, or reheat covered in a 180°C (355°F) oven until piping hot.
  • Freeze after cooking: Cool completely before freezing, then defrost overnight in the fridge and reheat gently to preserve the vegetable texture.

  1. Prepare the vegetables: peel and finely chop the onion, finely chop the garlic, deseed and cut the peppers into 2 cm pieces, and cut the aubergine and courgette into 2 cm chunks. Roughly chop the tomatoes, keeping any juices.
  2. Warm the olive oil in a Dutch oven over a medium heat. Add the onion with a pinch of the salt and cook for 8 to 10 minutes, stirring, until soft and translucent but not browned.
  3. Stir in the garlic and cook for 1 minute until fragrant. Add the peppers and cook for 5 minutes, stirring occasionally, until they begin to soften.
  4. Add the aubergine and cook for 6 to 8 minutes, stirring, until it starts to take on a little colour and looks slightly softened. If the pan seems dry, lower the heat and keep stirring so the vegetables cook in the oil rather than catching.
  5. Add the courgette, tomatoes and their juices, the remaining salt, and the black pepper. Bring to a gentle simmer, then reduce the heat to low, cover, and cook for 18 to 22 minutes until the vegetables are tender but still hold their shape.
  6. Remove the lid and simmer for 3 to 5 minutes to thicken slightly, stirring carefully so the vegetables stay distinct. Tear in most of the basil, taste and adjust seasoning, then scatter over the remaining basil to serve warm or at room temperature.

Recipe notes

Tips

  • Cut the vegetables to a similar size so they cook evenly and stay distinct rather than turning into a purée.
  • Keep the heat low once the tomatoes go in; a gentle simmer preserves the shape of the courgette and aubergine.
  • Ratatouille often tastes even better after 30 minutes’ rest, once the flavours have had time to settle.

Substitutions

  • Replace Fresh basil with Fresh thyme for a more earthy, Provençal flavour.
  • Replace Black pepper with Aleppo pepper for a gentler, fruitier warmth.

Storage

  • Refrigerate up to 4 days
  • Cool completely, then refrigerate in a sealed container for up to 4 days. Reheat gently in a saucepan over a low heat until piping hot, or warm in a 180°C (355°F) oven for 15 to 20 minutes. Freeze for up to 3 months; defrost overnight in the fridge before reheating.
