Arroz con Pollo a la Española (Spanish Chicken and Rice)
Why this recipe works
- Layered savoury base: Browning the chicken first leaves flavour in the pan, which is then picked up by the onions, peppers, garlic and paprika.
- Saffron-infused rice: Crushed saffron blooms in the hot stock, giving the rice its characteristic golden colour and gentle fragrance.
- Everything cooks together: Returning the chicken to the pan lets the rice absorb the stock and meat juices while the thighs finish cooking.

Ingredient notes
- Choose the right rice: Short-grain rice gives the dish its rounded, absorbent texture. Bomba rice is a good Spanish option if available.
- Use sweet paprika carefully: Sweet paprika adds warmth and colour without heat. Stir it briefly into the oil, then add stock promptly so it does not catch.
- Make the saffron count: Crushing the saffron threads before adding them helps release their colour and aroma into the stock.
Common mistakes
- Avoid a crowded pan: The rice needs space to cook in an even layer; overcrowding can make it cook unevenly and turn gluey.
- Keep the simmer gentle: Once the rice is added, a hard boil can reduce the stock too quickly before the grains have softened.
- Do not scorch the paprika: Paprika can become bitter if fried for too long, so bloom it briefly and loosen the pan with stock straight away.
Make-ahead tips
- Good for leftovers: Cool promptly, then store in a sealed container in the fridge for up to 3 days.
- Reheat gently: Warm in a covered pan over low heat with a splash of chicken stock, stirring occasionally until piping hot throughout.
- Freezer-friendly: Freeze after cooking for up to 2 months, then defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Heat the olive oil in a wide large frying pan over medium-high heat. Add the chicken thighs skin-side down and cook for 6 to 8 minutes until deeply golden, then turn and cook 3 minutes more. Transfer to a plate.
- Reduce the heat to medium and add the onion and red pepper to the pan. Cook for 6 to 8 minutes, stirring, until softened and lightly coloured. Stir in the garlic for 30 seconds until fragrant.
- Stir in the sweet paprika for 10 seconds so it blooms in the oil, then immediately pour in a splash of the chicken stock to stop it catching. Crush the saffron threads between your fingers, add to the pan, then pour in the remaining stock and bring to a gentle simmer.
- Stir in the rice and return the chicken (and any juices) to the pan, nestling it into the liquid. Bring back to a steady simmer, then reduce to low so the rice cooks gently. Simmer for 25 to 30 minutes, stirring once or twice, until the rice is tender and the chicken is cooked through.
- Remove from the heat and leave to stand for 5 minutes so the rice settles and the juices redistribute. Spoon the rice and peppers onto plates and top with the chicken.
Recipe notes
Tips
- Use a wide pan so the rice cooks in an even layer; if the pan is crowded, the rice can turn gluey.
- Keep the simmer gentle once the rice goes in; a hard boil can make the stock reduce too quickly before the rice is tender.
- If serving vulnerable groups, make sure the chicken is piping hot throughout with no pink at the bone before serving.
Substitutions
- Replace chicken thighs with chicken drumsticks for a similar cooking time and rich flavour.
- Replace short-grain rice with bomba rice for a more traditional Spanish texture; add an extra splash of chicken stock if needed.
- Replace sweet paprika with smoked paprika for a deeper, smokier finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat with a splash of chicken stock in a covered pan over low heat, stirring occasionally, until piping hot; freeze for up to 2 months and defrost overnight in the fridge before reheating.
