Mujaddara (Lentils, Rice and Caramelised Onions)
Why this recipe works
- Deep onion flavour: Slowly caramelised onions bring sweetness, savoury depth and the dish’s signature topping.
- Simple pantry base: Lentils, rice, cumin and onions create a satisfying meal from economical everyday ingredients.
- Good for batch cooking: The lentil and rice mixture reheats well with a splash of water, while the yoghurt can be added fresh when serving.

Common mistakes
- Rushing the onions: Keep the heat moderate so the onions turn deep amber rather than scorching at the edges.
- Taking the lentils too far: Simmer the lentils until just tender before adding the rice; over-soft lentils can make the final dish heavy.
- Skipping the covered rest: Resting off the heat helps the rice finish steaming and keeps the grains more separate when fluffed.
Ingredient notes
- Use green lentils: Dried green lentils hold their shape well, giving mujaddara its characteristic texture.
- Rinse the rice well: Rinsing basmati removes excess surface starch and helps prevent the grains from clumping.
- Cumin keeps it earthy: Ground cumin adds warmth without heat; coriander gives a softer, more citrusy variation.
Make-ahead tips
- Keep yoghurt separate: Store the lentils and rice separately from the yoghurt so the topping stays cool and fresh.
- Reheat gently: Warm the mujaddara in a covered pan with a splash of water until piping hot, then add the yoghurt just before serving.
- Freeze without yoghurt: The lentil and rice mixture freezes well; defrost overnight in the fridge before reheating.
Authenticity notes
- A home-style staple: Mujaddara is widely cooked across the Middle East in slightly different forms, usually built around lentils, grains and onions.
- Yoghurt for contrast: A spoonful of yoghurt is a common pairing, adding cool creaminess against the warm spices and sweet onions.

Instructions
- Thinly slice the onion. Heat the olive oil in a large frying pan over medium heat, add the onion and a pinch of the fine sea salt, then cook, stirring often, until deeply golden and caramelised.
- Meanwhile, rinse the dried green lentils in a colander. Put them in a large pot with 900 ml water and bring to the boil, then reduce to a steady simmer until the lentils are just tender.
- Rinse the basmati rice until the water runs mostly clear. Stir the rice into the pot with the lentils, along with the ground cumin, remaining fine sea salt and black pepper.
- Cover and simmer on low until the rice is tender and the water is absorbed. If the pot looks dry before the rice is done, add a splash of water and continue cooking.
- Take the pot off the heat and leave it covered to rest so the grains stay separate. Fluff gently with a wooden spoon.
- Spoon the mujaddara into bowls and pile the caramelised onions on top. Finish with a drizzle of olive oil and a cool spoonful of whole milk yogurt.
Recipe notes
Tips
- For the best flavour, take the onions all the way to a deep amber colour; if they start catching, lower the heat and stir more often.
- If you prefer a looser texture, stir in 2 to 4 tbsp hot water after resting, then fluff again.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised whole milk yogurt.
Substitutions
- Replace basmati rice with brown basmati rice, but allow an extra 15 to 20 minutes of simmering and add more water as needed.
- Replace ground cumin with ground coriander for a softer, citrusy spice note.
Storage
- Refrigerate up to 3 days
- Cool the lentils and rice quickly, then refrigerate in an airtight container; store the whole milk yogurt separately. Reheat the mujaddara with a splash of water in a covered pan over low heat until piping hot, then top with the onions, olive oil and yogurt. Freeze the mujaddara (without yogurt) for up to 2 months and defrost overnight in the fridge before reheating.
