Kounoupidi Kapama (Greek Braised Cauliflower in Tomato Sauce)
Why this recipe works
- Layered tomato sauce: Softened onion, garlic and cooked tomato purée give the sauce a savoury base before the cauliflower braises in it.
- Soft, warming finish: The cauliflower becomes tender in the sauce, while cinnamon adds a gentle warmth without making the dish sweet.
- Simple one-pot method: The sauce and cauliflower cook together in one pot, keeping the method straightforward and the washing-up minimal.

Ingredient notes
- Choose firm cauliflower: Use a compact head with tight florets so the pieces keep their shape during braising.
- Keep the cinnamon subtle: Ground cinnamon should add background warmth rather than dominate the tomato sauce.
- Use good olive oil: Extra virgin olive oil is central to the richness of the sauce, so a fuller-flavoured oil is worth using here.
Texture tips
- Keep the florets intact: Cut the cauliflower into large florets and simmer gently so it turns tender without collapsing.
- Let the sauce settle: Resting the finished dish briefly off the heat helps the tomato sauce thicken and cling to the cauliflower.
Make-ahead tips
- Good the next day: The tomato, olive oil and spice flavours deepen after chilling, making this a practical make-ahead dish.
- Reheat gently: Warm in a saucepan over low heat with a splash of water if needed, stirring carefully to avoid breaking the florets.
- Freeze in portions: Cool completely before freezing, then thaw in the fridge and reheat until piping hot throughout.
Serving ideas
- Serve with something starchy: Bread, rice or potatoes work well for catching the rich tomato and olive oil sauce.
- Finish with herbs: Fresh parsley keeps the dish bright; dill gives a more aromatic, aniseed-leaning finish.

Ingredients
Instructions
- Halve and thinly slice the onion, and finely chop the garlic. Cut the cauliflower into large florets so they hold their shape while braising. Roughly chop the parsley.
- Warm the olive oil in a large pot over medium heat. Add the onion with a pinch of the salt and cook for 8 to 10 minutes, stirring, until soft and lightly golden. Stir in the garlic and cook for 1 minute until fragrant.
- Stir in the tomato purée and cook for 1 to 2 minutes to deepen the flavour. Add the canned tomatoes, bay leaves, ground cinnamon, remaining salt and the black pepper. Bring to a gentle simmer.
- Nestle the cauliflower florets into the sauce, turning them to coat. Cover and simmer gently for 25 to 30 minutes, stirring carefully once or twice, until the cauliflower is tender but not falling apart. If the sauce looks too thick at any point, add a small splash of water and return to a gentle simmer.
- Remove the bay leaves and taste, adjusting salt and pepper if needed. Stir through most of the parsley and let the pot stand off the heat for 3 to 5 minutes so the sauce settles. Serve warm, finished with the remaining parsley.
Recipe notes
Tips
- Keep the simmer low and steady so the cauliflower stays in neat florets rather than breaking up.
- For a richer result, let the finished dish stand for 10 minutes before serving so the olive oil and tomato sauce meld.
- If serving vulnerable groups, ensure the dish is reheated until piping hot throughout.
Substitutions
- Replace Fresh parsley with Fresh dill for a more aniseed, herb-forward finish.
- Replace Ground cinnamon with Allspice for a similar warm spice note.
Storage
- Refrigerate up to 4 days
- Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat with a splash of water, stirring carefully, until piping hot. Freeze in portions for up to 2 months and thaw overnight in the fridge before reheating.
