Chaufa (Peruvian Fried Rice)

Chaufa brings together the wok-fried technique of Chinese-Peruvian cooking with the comfort of a quick rice dish. Cold, cooked long-grain rice is essential here, giving separate grains that can toast rather than turn soft, while soy sauce, white pepper, garlic, ginger and spring onion create a sharp, savoury base. Chicken thighs add juicy pieces throughout, scrambled egg gives softness, and toasted sesame oil finishes the dish with fragrance and gloss. Fast, filling and flexible, it works well as a weeknight dinner and is best served piping hot straight from the wok.

Why this recipe works

  • Fast wok cooking: Using cooked chilled rice keeps the stir-fry quick, with the chicken, egg and aromatics cooked in sequence in the same wok.
  • Savoury depth: Soy sauce, garlic, ginger, spring onion and white pepper build a sharp, umami-rich base without needing a long sauce.
  • Separate grains and tender chicken: Cold rice fries cleanly over high heat, while chicken thighs stay juicy through the short, hot stir-fry.

Authenticity notes

  • Chifa influence: Chaufa is part of Peru’s chifa cooking, where Chinese stir-fry technique meets local Peruvian everyday ingredients.
  • High-heat frying: The recognisable texture comes from tossing chilled rice hard over strong heat so it fries rather than steams.

Ingredient notes

  • Use chilled long-grain rice: Cooked and chilled long-grain rice separates more easily in the wok, helping avoid clumps and a heavy texture.
  • White pepper matters: White pepper gives the dish its clean, sharp savouriness without adding chilli heat.
  • Finish with toasted sesame oil: Adding toasted sesame oil off the heat preserves its aroma and gives the rice a glossy finish.

Common mistakes

  • Avoid overcrowding: If the pan is too full or not hot enough, the rice will steam instead of picking up a light toasted edge.
  • Do not use warm fresh rice: Freshly cooked rice is more likely to clump and turn soft; chilled rice gives a cleaner fried-rice texture.
  • Do not overcook the egg: Scramble the egg just until set, then return it at the end so it stays soft rather than rubbery.

Make-ahead tips

  • Prepare the rice ahead: Cook the rice in advance and chill it well, then break up any clumps before it goes into the wok.
  • Reheat in a hot pan: Reheat leftovers in a hot wok or frying pan with a small splash of water, tossing until piping hot throughout.
  • Best freshly fried: Chaufa has the best texture straight from the wok, when the rice is hot, separate and lightly toasted.

  1. Break up the cold rice with your fingers so there are no clumps. Cut the chicken into bite-size pieces. Thinly slice the spring onions, keeping the white and green parts separate, then finely chop the garlic and ginger.
  2. Heat a wok over high heat until very hot, then add 1 tsp of the sunflower oil. Beat the eggs in a bowl, pour into the wok, and scramble quickly until just set. Tip onto a plate and set aside.
  3. Add the remaining sunflower oil to the wok and return to high heat. Add the chicken and stir-fry for 4 to 6 minutes until browned and cooked through. Add the spring onion whites, garlic and ginger, and stir-fry for 30 to 60 seconds until fragrant.
  4. Add the rice and toss hard over high heat for 2 to 3 minutes until hot and starting to toast. Drizzle in the light soy sauce around the sides of the wok and toss to coat evenly. Stir in the white pepper.
  5. Return the scrambled egg to the wok and add the spring onion greens. Toss for 1 minute until everything is evenly mixed and piping hot. Take off the heat and finish with the toasted sesame oil.

Recipe notes

Tips

  • For the best texture, use rice that has been cooked and chilled so it fries rather than steams.
  • Keep the heat high and work quickly so the chicken browns and the rice picks up a light toast.
  • If serving vulnerable groups, use eggs with a lion mark or another trusted food safety standard.

Substitutions

  • Replace chicken thighs with chicken breast for a leaner result; reduce the stir-fry time slightly to avoid drying it out.
  • Replace light soy sauce with dark soy sauce for deeper colour and a slightly sweeter, richer flavour; start with a little less and adjust to taste.
  • Replace toasted sesame oil with sesame oil for a milder finish.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, cover and refrigerate. Reheat in a hot wok or frying pan with a small splash of water, tossing until piping hot throughout.
